Mascarpone Stuffed French Toast with Peaches
I've made this 7 times with 7 different fruits (peach, strawberry, blueberry, orange, apple, mango, and papaya)...and each time it's delicious. Definitely a crowd pleaser and keeper.

Home-Style Scalloped Potatoes
Very good. I prefer my scalloped potatoes with a little heavier sauce so instead of 5 cups milk, I used 2 1/2 cups milk and 2 1/2 cups sour cream. I also added green onion and diced ham for a little extra flavor.

Spicy Sausage and Rice Casserole
I used spicey italian sausage and added mushrooms and sweet cherry peppers (to counter the heat) and topped it with panko crumbs and shredded mozarella and parmesan cheese. It was a very tasty casserole.
