April's Chicken Fried Rice

Pretty good base recipe. I 86'd the rice and replaced it with frozen peas. Substituted coconut oil for the butter to make it dairy free. Pretty tasty!

Easy Taco Seasoning Mix

I used this as a replacement for my "lack-of" in my pantry. It serves well as a replacement. I prefer my brand with the chunks. I used dried minced onion instead of powder. I added some spice with 1/2tsp cayenne pepper. Thanks!

Southern Chicken Fried Steak

Okay. This recipe is excellent for method, but vague for flavor. I used peanut oil in a chicken fryer and made up a batch of gravy with the pan scrapings. As for the seasonings, I used equal amounts of ground oregano, ground thyme, ground marjoram, cayenne, paprika, chili powder, white pepper, black pepper and sage (about 1/4tsp each for the 2 cups of flour). Instead of veal, I used minute steaks. Minute steaks required about 4 minutes per side. Enjoy!

Rhubarb Cobbler

I really enjoyed the simplicity of this recipe. I went from picking the rhubarb to eating the cobbler in less than an hour. I felt that it needed a bit of something else to balance it out. The next time, I will try vanilla. If that isn't it, then perhaps ginger.

Chef John's Buttermilk Fried Chicken

Yummy!! I let it soak overnight. The herbs come through in layers. First the crisp, then the sage, then the cayenne. You can taste everything!! Loved it! My 2 year old was double-fisting pieces into his mouth faster than we could cut them. Thank you!

It works when I can pick 3 kids from school and have dinner ready in less than an hour! Loved it!! I suggest halving the bullion. It is a little salty.

Carrot Cake

Made this for a wedding reception. It was a hit! Use the Whipped Cream Cream Cheese frosting recipe if you are making a sheet cake. That way, the frosting flavor won't overpower the wonderful flavors contained in this cake. Beautiful recipe!!

Whipped Cream Cream Cheese Frosting

I like the flavor of a cream cheese frosting. I usually don't like the richness, though. Cream cheese frosting tends to overpower the cake. I went on a quest to find a less heavy frosting. This one is perfect!! It spreads like a dream. It doesn't separate. It accentuates the cake without overpowering. Perfect!! I even had some left over and put it in my coffee. Try it in hot chocolate, or on some spiced apple cider! Perfect perfect perfect!!! Love this one!
