I unfortunately only had a Smoothie Jr blender, (thats going to change,) so it was a pain to blend, i had to add a couple splashes of skim milk, but it turned out great! and smooth, i steamed the cauliflower for 25 minutes in my steamer per steamer directions and added it the way recipe says..i liked it although i may cut the parmesan by a little, it was a little much for me, but my boyfriend like it..i left dinner for him and came home and said how was the cauliflower? he said "what cauliflower? i ate mashed potatoes" i said nope it was cauliflower..SCORE!!.. which is a great substitute since he just got diagnosed with type II diabetes and was missing his mashed potatoes...it really makes about 2 healthy servings , which works out great for us...thanks, i shared with alot of my friends.
