My favorite things to cook
Healthy recipes...lately fish and salads. Love to make soups and casserole in winter. Love to use basil and olives and lemons! Oh, and Did I say I LOVE shrimp and chocolate...but not together!
My cooking triumphs
I consider it a triumph each time I play around with ingredients and wind up with something new and delish! ie. my stuffed acorn squash with chicken in a rosemary apple cream sauce.
My cooking tragedies
The first pancakes I ever made. They were fresh blueberry pancakes. I was a new bride. The pancakes worked well as soles for our shoes. Didn't know that baking powder/soda could go bad.

Asian Tuna Patties
Basic recipe looked really good...made a few changes. I made 1/2 a recipe for just the two of us...but used the full amount of sesame oil. Patties were a great consistency! Used just the egg white, and added a pinch of ginger and curry powder. I also omitted the cornmeal. Served it with a spinach salad with cuke, scallion, orange pepper and sunflower seeds with an Asian dressing. Put small patties (1/2 recipe made 6 small patties) around the salad and topped the patties with an oyster sauce which I thinned and added sesame seeds. Looked great and was rather tasty!

African Peanut Soup
Loved it! Like some others I added sweet potato and cilantro. Used wild rice which gave a nice texture along with the addition of chopped peanuts, as I only had creamy natural pb, also chopped up some chicken and cooked it in the soup. Served with a wedge of lime to squeeze! Delish!

Quinoa and Black Beans
Love this recipe! I prefer it warm/room temp. I added roasted red peppers for color and flavor, and usually serve it over greens with avocado as garnish and make a cilantro dressing to drizzle over. Leftovers are great right out of the fridge.
