Holiday Chicken Salad

Okay, this is a great recipe. Only one thing to try if you have extra time: saute a couple spoonfuls of sugar in a teflon pan with chopped pecans and/or raw sunflower seeds and you have sugared nuts to throw in the salad. Do this with whatever portion you will eat the same day, as the nuts get a little soft after a few hours. When sugaring nuts (no fat is needed), be sure to watch the pan closely...stirring often, and keeping the heat at a med to med high...but not high. The sugar and nuts can burn quickly, so stir constantly after the sugar has liquified.

Brazilian Fish Stew

I almost deleted this from my inbox, and then thought I'd quickly read the reviews. I must try this. Everyone except one review has been positive. I have access to all of these ingredients in Mongolia. However, fish is usually frozen and expensive since we are landlocked. So, I'm going to try it with chicken or beef. Other meats easy to purchase here: horse, camel, and goat. Anyone have any great recipes for these?!

Minnesota Golf Course Chili

This is yummy! I made with stew meat instead of ground beef, and that was a nice change. I also made my kidney beans from dried instead of using the canned (because I had dried on hand). I used 1 T. brown sugar instead of white sugar, and added some cumin.

Boiled Custard I

This is just perfect! I tried it in a double boiler and it just seemed to take forever. Then, I tried it on medium heat, stirring almost continuously, and it worked fine. Then, I added cooked rice at the end for a rice pudding/custard. I shared this with two Mongolian friends who had never had pudding and they loved it...had seconds and thirds!
