Apple Danish

So far, so good. I posted a pic of mine as it was in the final rising. Looks nice and puffy so far, I'm well pleased with this recipe. I'll post a final pic when it comes out of the oven and after I've had a piece. I cleaned up the little filling remaining the saucepan after I filled the dough - it was yummy. Can't wait for the final danish! OK - finished the danish - posted 2 more pics (cut and uncut danish). It was absolutely delicious! I had baked it in the evening and frosted it in the morning. The only thing I'll do differently next time is heat the danish slightly if I make it the night before - that way the whole thing will be nice and warm. This is a definite must-make!

Oatmeal Peanut Butter Cookies III

I'm not a peanut butter fan at all, but I made these for my family and they devoured them! I made another batch this week and used heaping 1/4 tsp for each cookie and they came out about an inch diameter. A great 1-2 bite snack.

Delicious Ham and Potato Soup

This was delicious! Even my soup-hater said this was "pretty good" which is an auto response when it turns out something she doesn't normally like actually tastes good, but she doesn't want to admit the truth. I did substitute 2.5tb corn starch for the flour because I had a wheat allergy.

Apple Pie by Grandma Ople

I made this for a pie contest at church - never made it before. I won 2nd place - but only because the preacher preferred pecan pie :) I cooked the caramel a bit too long and it started to get really thick and there didn't seem to be enough there because of that - so I went ahead and mixed that directly in the apples before putting them in the pie crust - then mixed up a half batch more of the caramel and poured that on top of the apples. I did a full crust with a few slits and so didn't pour any of the caramel on top of the crust - just an egg wash. Unfortunately I didn't get to try any because by the time I made it back to the judging table it was gone. This means I'll have to make it again - a personal one this time.

Salsa Chicken

Family really liked this - even the non-mexican food eater! I used chicken tenderloins instead of breast and a shredded mexican cheese blend because i didn't have cheddar. Delicious!

Bacon Spaghetti

This was very good. Going by what a few other reviewers said about it being dry, I halved the amount of pasta. I didn't have any spaghetti so I used corkscrews, which hold more of the olive oil and bacon pieces each bite. I also chopped the bacon before pan frying. Kept about a tablespoon of bacon drippings with the bacon when I incorporated the pasta. All in all - it was very good and I would definitely make again. Thanks for the recipe.

Chocolate Pudding Cake III

This was excellent - though I do recommend when it comes out of the oven to cover it and let it sit for a day. Neither of my kids liked it fresh from the oven, but after it sat in the kitchen for a day they couldn't get enough of it. Made one last week and just made another last night. Delicious!
