Amazing Chicken

Reviewed: Feb. 18, 2013
you ABSOLUTELY MUST read as many of the reviews as possible before attempting this dish. I spent a good 20 minutes reading reviews before I even pulled any ingredients out. I ended up adding cayenne pepper, onion powder and garlic powder to the mayo and parmesan cheese to the bread crumbs. I seasoned the chicken in salt and a good amount of pepper. I spread on a THIN layer of mayo on chicken and rolled it in italian seasoned breadcrumbs before spraying olive oil on top and cooking on foil lined cookie sheet. I cooked for 15 minutes before turning each breast over and cooking for 15 more minutes. Result: crunchy almost fried-chicken like top layer and juicy inside with a nice kick.

Pan-Seared Tilapia

Reviewed: Jan. 27, 2013
Quick, easy, and delicious! Only change: I used whole wheat flour. Regardless of the flour, it was very very tasty and a nice change from my usual weekday lemon pepper tilapia.

Broiled Tilapia Parmesan

Reviewed: Feb. 18, 2013
in my opinion, fish is too delicate for the mayo/butter/parm mixture. Tasty but not my ideal way to enjoy tilapia.

Curried Honey Mustard Chicken

Reviewed: Feb. 16, 2013
i am NOT a huge curry fan but my fiance and I both enjoyed this... He actually requested that I make a few more chicken breasts next time so he can treat himself to thirds and leftovers. Only reason I did not give it 5 stars was because of my error: I added more than a 'pinch' of cayenne..... although each bite was tender and delicious, it was WAY too spicy. Note to self: just a PINCH and no more.

Roasted Garlic Cauliflower

Reviewed: Feb. 16, 2013
great and simple way to enjoy cauliflower. I've tried it twice with the cheese (and breadcrumbs) and after last night, fiance and I agree: its would be just as tasty without the cheese... we like simply seasoned veggies so salt and pepper is delicious enough for us.
