Eggnog Quick Bread

This is a really good recipe. I did add a small box of vanilla pudding and I increased the eggnog to 1 1/3 c. I baked it 55min but I think I should have taken it out at 50min since the edges are crunchy - not burnt - but crunchy. I added a glaze to the top and I am glad I did because it really adds to the flavor of the bread. For my glaze I mixed 1c of powdered sugar and added rum extract and eggnog until I liked the consistency and flavor I liked. I will make this again but bake it a little less. I added a picture with the glaze :-)

Grandma's Best Ever Sour Cream Lasagna

This receipe is sooooooo good!! I do not care for ricotta cheese or cottage cheese so I have never found a lasagna that I liked until tonight. I did make a few changes to the receipe only due to the fact that I did not have all the indredients on hand. Instead of making the sauce I used a sausage onion spaghetti sauce that I had in the panty (it had chunks of tomato, onion, and sausage in it). I also used a 'hot' pork sausage. After the first bite my husband and i are hooked. I will be making this dish again and again!!! Thank you for sharing!!!

Jimmy's Mexican Pizza

This was delicious!! I followed the recipe exactly and my husband and I really loved it -- so much better then Taco Bell's Mexican Pizza -- which used to be one of the only reasons I would go to Taco Bell. Next time I make this dish I think that I am gonna bake the bottom tortilla for a few minutes before I layer the beans and meat -- I woulda preferred the bottom tortilla a little crisper :)

Chicken Pot Pie III

This was really good. I made this last minute with what I had on hand - it was made after I came home from an out of town trip to a hungry husband and no groceries in the house. I used 2 cans of cream of mushroom soup in place of the celery and potato since that is all i had in the cupboard. I also used canned chicken and fresh carrots and broccoli - which I steamed before adding to the mixture. I added garlic, salt, pepper, and cayenne for an extra kick. Was really yummy... will make again for sure!

Beef Tips and Noodles

This was really good! I did change a couple things as other reviewers had recommended. I opted to use soy milk instead of the water, used fresh mushrooms, I added 2 tbs of sour cream, and I seasoned the meat with some pepper and garlic powder. I baked it in an 8x8 pan at 300 degrees for 2 1/2 hours covered. The meat was really tender and it was delicious. I served it over the egg noodles. I will be making this again for sure!!

Boilermaker Tailgate Chili

This is very good..I didn't use all the ingredients. Instead of caned beans I used dry pinto beans. I also substituted the diced tomato's for tomato sauce. I added 1/2 lb of bacon 1/2 lb spicy sausage instead of the 1 lb of Italian sausage. Used 2 full beers and 1 tsp. of curry.. I kept everything else the same. This Is the best chili I have made yet. Thanks for the recipe.

Incredibly Cheesy Turkey Meatloaf

I really enjoyed this recipe - and so did my husband :-) I cut the recipe in 1/2 and I used Italian seasoned ground turkey meat since it is what I had in the freezer. Since I had the Italian seasoned turkey I changed the recipe up a little bit - I used grated parmesan cheese and added diced jalapenos as well as fresh garlic, oregano, salt, and pepper, 1/2 oatmeal and 1/2 bread crumbs. I used 1 egg and 1/2 c milk but I found that my loaf was too liquidy - so I added more oatmeal and bread crumbs until the consistency was right. I baked it for 1hr and 15 min and it was perfect! Very very good!! I know that I did make changes to the recipe but I only did so since I did not have plain ground turkey. I will be making this again for sure!!

Easy Batter Fruit Cobbler

This cobbler is super easy to make - I used fresh strawberry's and I had this put together in 7 minutes. I followed the recipe exactly aside from the fact that I sliced the strawberry's since ours were on the large size. The problems I found with this recipe is that using 4 tbs of butter is way too much - my husband noticed an extreme butter taste right away which he did not care for. Also, the edges of the cobbler were extremely chewy - not appetizing at all. We did eat the cobbler warm with vanilla ice cream over the top. It was good but the overpowering butter flavor and chewy edges are why I gave this recipe 3 stars. I may try this again and use less butter and see how the edges come out...

Potato Pancakes

I scaled this recipe down a little since it was just my husband and I. I had never had potato pancakes before - but my husband wanted them so I made them and I was pleasantly surprised. These are really good! I did add more salt and pepper then called for.. and I think that I may have used a little more onion too. I think there is a lot that you can do with this recipe to accommodate it to your tastes .. I will definitely make them again but I may add some diced jalapenos to spice it up just a little and I may add a little grated cheddar too :-)

Sausage and Peppers Lasagna

This recipe is really yummy! I did use 1lb of italian bulk hot sausage, added chopped mushrooms, left out the peppers, and left out the extra water. I was really skeptical of using the cream cheese but it was soooo delicious. Next time I make this I think that I am going to use 1 1/2lbs of italian bulk hot sausage, and use a little more spaghetti sauce .. I barely had enough to cover the top ... I think that using the 2 blocks of cream cheese was perfect - so creamy! This is a recipe that you can easily change to meet your needs (like extra cheese, mushrooms, etc) I will be adding this to my recipe box for sure!

Cheesy Cornbread Casserole

This was really good. I did use 2 boxes of corn muffin mix. I also used 1/2lb of ground beef, 1/2lb of hot bulk sausage, some fresh garlic, pepper jack cheese (since that's all I had) and added olives. I would make again!

Cashew Crusted Chicken

This was really good! Even my husband raved about this one. I served it with saffron rice and steamed broccoli. I did cut this recipe in half since it was only the 2 of us .. I wish I hadn't though because I would have loved some leftovers. The only change that I made was that I added a little extra apricot preserves to the sauce before dipping the chicken in to it (I tasted it and it tasted to much like mustard for my liking). I also added a dash of chili pepper to the sauce just to give it a little kick. I did follow other reviewers advice and I seasoned the chicken with a little salt, pepper, and garlic seasoning. I put the cashews in the food processor until they were finely chopped. This really helped the cashews stick to the chicken. I baked for 20 minutes then broiled for 3 so the cashews were crunchy. I reheated the sauce and brought it back to a rolling boil so we could use it for dipping - wonderful!!! The sauce really made the dish. I will be making this again for my hubby and I. Next time I will make extra for leftovers though :-)

Chocolate Cavity Maker Cake

I would give this a 5+ star for flavor. The only problem that I had with this cake was when I flipped the bundt cake over to cool it on the wire rack it fell apart - I am guessing this was due to the fact that its super moist? Anyways, I put it back together as best as I could and once it cooled I topped it with powdered sugar. My husband also made a nice rum glaze to pour over the top - delicious! I would love to make this again - kinda skeptical though since it did fall apart. We'll see.

Slow Cooker Chicken Taco Soup

This was sooooooo good!! Did not last long in our house. I took some to work with me to share w/ a couple girlfriends and they loved it and requested the recipe immediately - they could not wait to go home and make it for themselves. The only changes I made were that I was used chicken broth instead of beer, threw in some chopped jalapenos, and I used 2 10oz can diced tomatoes, and 1 4oz can fire roasted green chilies. We topped it with sour cream, grated cheese, cilantro, and green onions. Thank you for the recipe - I will be making this time and time again :-)

Ham and Noodle Casserole

This was really good. I did make some changes though, just to give it some more flavor, since I read that some reviewers thought it was on the bland side. I sauteed some onion, red, and orange peppers. I also added some red pepper flakes and used pepper jack cheese. I also added just a little milk to lighten it up a little - was on the thick side. I topped it with the breadcrumbs baked it and put a little grated pepper jack cheese over the top right when I pulled it out of the oven. With the changes I made it turned out to have a lot of flavor and both my husband and I went back for seconds :-) I think this is a really good basic recipe that you can add too to make it your own.
