Turkey Pot Pie I

This was so good! I doubled up the recipe and put it in a 13x9in baking dish because one little pie is not enough for my big family. I also had to double up the pie pastry recipe to make up for the bigger container. I used leftover shredded turkey from Thanksgiving. I didn't have enough parsely and I was out of celery, think it would've been better if I had the right amount of ingredients. I also used chicken broth instead of bouillon because I didn't have it and it's expensive and it has a bunch of MSG in it. I think it would be better with some peas added, it's just not pot pie without the peas. I did what the other reviews suggested and I let it cool before pouring in my crust. Because I put it in a bigger container, I had to bake it about 10 minutes longer. This is a keeper though.

Pecan Pie Bars I

These were gooey yummy. Maybe almost too sweet, but so good. They were a much easier replacement for pecan pie. We couldn't stop eating them, but gained a few pounds so next time I make these I'm going to play with it a little and exchange agave nectar for the corn syrup. Definitely making them again though.

Bloody Broken Glass Cupcakes

I'm definitely going to make these again. After reading some of the reviews, I filled mine with cherry preserves to make a more flavorful and bloody effect when you bite into it. the only thing that got me was making the glass, big didn't realize it would take so long to boil it to 300. It turned out perfect after an hour or so of standing over the stove. Next time I'm going to add some almond extract to the glass mixture to give it more flavor. The kids loved it, but me personally would prefer candy with more flavor than just sugar.

Spinach Basil Pesto

Yummo! I followed this recipe pretty much as it is. I didn't have any pine nuts at all or fresh basil, so I used dried basil leaves in less amount. It was perfect! I tossed it with fettuccine, shrimp and asparagus for a yummy meal! My kids even liked it, which shocked me because they turned their noses up at it at first because it's so green. I will be using this for my pesto sauce from now on! Maybe next time I will get pine nuts.

Slow Cooker Taco Soup

Oh my gosh! This was amazing!I used 1 1/2lbs of very lean natural ground beef, didn't have to drain it! I used 2 freshly diced tomatoes and omitted the chiles because my kids don't like anything hot. I also added a cup of beef broth and went ahead and drained the cans of corn (I normally use frozen corn, but didn't have any) and olives so it wouldn't be too watery. I used about a cup of dry black beans (I try to avoid canned processed foods) and I slightly cooked the onion, 4 cloves of minced garlic, and bell pepper in the skillet when the meat was just about done browning. I served different toppings to put on top: shredded Mexican style cheese, sliced avocado, sour cream, fried corn tortilla strips, and cut up some limes. Nice little make-it-your-own taco soup bar.

Fruit Pizza II

Yummo! I served this when I had a few guests over and they asked for the recipe, they loved it! It was so fun to make too, me and the kids had fun putting on the fruit. I used Anne's sugar cookie dough recipe from Fruit Pizza 1 from this site but I added a tsp of vanilla to the mixture (a cookie just isn't a cookie without vanilla extract). I also did half the white sugar in the recipe and substituted the other half with Stevia sweetener. I used lite cool whip and neufchatel 1/3 less fat cream cheese. We topped our pizza with blueberries, strawberries, banana, kiwi, and fresh Texas peaches. I did over brown the cookie just a tad to keep from getting soggy. The orange sauce definitely topped this off perfect! I'm gonna make it again for our church get togethers!

Apple Puff Pancake

My nine year old got to take the first bite and I heard her shout,"this is soooo good!" That told me it was a success! I read some of the reviews and went by what a few people said, I reduced the milk to 1 cup, I also used only 1/2cup of all-purpose flour and added 1/2 cup of whole wheat pastry flour to make it a little more healthy. I substituted Stevia sweetener for the sugar for health purposes, and increased the cinnamon to 1/2tsp because we love cinnamon. This kind of reminded me of a caramelized apple upside down cake i make for Thanksgiving and I decided to caramelize the apples in the butter and brown sugar and drizzled a little honey over it and let that simmer on low heat for a couple minutes and flipped the apples over and let them finish caramelizing for a couple more minutes. I didn't have a 9x9in square pan so I just used a 9inch pie plate. I sprayed it with cooking spray first, thank goodness I did, poured the apples on the bottom and then poured the batter on top. I had to cook it for 23 minutes for it to get done all the way and it was beautiful when it came out. We loved it, didn't even need to put syrup on it. I will definitely make this again using my tweaks. Yummy and healthy, can't beat that!

A Good Easy Garlic Chicken

This was a definitely a good quick way to make chicken. I used olive oil instead of butter, so much better for you. When I need a quick meal to make on a hurried day, this is the one I'm going to reach for. I gave it 4 stars because it's not the most succulent chicken I've had, but given that it's a quick and easy recipe that doesn't require a lot of time and marinating, I thought it was good enough.

Garlic Broccoli Spears

I would give this 5 stars but my kids like broccoli but didn't eat this version. I loved it! I thought it was a yummy and different twist to steamed broccoli. I wouldn't use full strength olive oil though, unless you really like the strong taste of olive oil. The first time I made it I used light olive oil and it was good, the second time I was out of the light and had to use the extra virgin and it was a little strong. The minced garlic is my favorite part, the lemon gives it just the perfect flavor. I would make it again for myself!

Unbelievably Awesome Barbeque Chicken Pizza

This pizza was so yummy! I had to use 4 chicken breast halves I guess because the ones I had were small. I added a little extra basil and italian seasoning because the sauce that came with the pizza kit I bought (which was all I could find, couldn't find any Boboli pizza crust) was blan. I used light olive too because I didn't have any sesame seed oil, I'm going to try that the next time I make it. I also sauted my onion slices and added some sliced bell pepper on top of the chicken, then I sprinkled some cheddar cheese on top of that. My two oldest daughters didn't like it because they're just picky, me and my youngest loved it! It was definitely awesome!

Lisa's Chocolate Chocolate Chip Cake

This cake is so good and moist. I made it for my daughter's birthday and used a 13x9 inch cake pan and cooked it for 48 minutes at 300 degrees (I have a really old gas oven that gets too hot), cut into the shape of a guitar and used cream cheese icing to decorate it. We couldn't stop eating the scrap cake pieces when I was cutting it! I used regular sized chocolate chips because that's all my dinky little grocery store had. Still so yummy! We'll see how the party guests like it tomorrow. I'm sure they'll love it, best cake I made yet! Thinking about making cupcakes out of this recipe too. Thanks Lisa!

Banana Pancakes I

I thought these were good. I should've used 2 bananas instead of the one the reviews said, one banana just doesn't give it enough banana flavor. I like the pb with syrup idea, but one of my kids didn't like them with pb and my youngest didn't like the pancakes at all, but she's the picky one. I did what the reviews said and I added 1tsp of cinnamon and 1/2 tap nutmeg to the dry ingredients, and 1 tap vanilla to the wet ingredients. I also added 1/4c chopped pecans to give them a crunch. Yummy when you slice more bananas on top, but I can't get enough bananas!

Baked Spaghetti Squash Lasagna Style

This was so good. I have never had spaghetti squash before and bought one on accident thinking it was butternut squash. When I cut it open I got a surprise. I searched and found this recipe and tried it out. Only thing I did different was I layered it in a pyrex baking dish. What a way to eat such a fun squash! I recommend this to anyone who likes italian flavor.
