Spicy and Creamy Vegetable Soup

Reviewed: Aug. 18, 2012
My husband scolded me for having been married to him for the last 7 years and never serving this to him before. He said it was the best soup I have ever made. Thanks for a fantastic recipe! Alterations: I didn't have celery, green beans or mushrooms on hand, but it was still good. I did have 1/2 cup dry lentils, so I threw them in at the same time as the potatoes to add heartiness since I was missing some ingredients. I also added some salt--not sure how much as I did it to taste, but it was quite a bit. The soup was quite spicy, so I added a little milk to the kids' bowls after I served it, which also helped with the temperature for them. Hubby and I ate it and lived it full strength.

Pico de Gallo Chicken Quesadillas

Reviewed: Jul. 7, 2012
Loved it! Thanks so much for this recipe. I had some roasted Hatch chiles and used them instead of jalapeƱos. Also, I pulled my bell pepper out of the fridge and it was unfotunately covered with mold. I had some coconut lime roasted corn left over from last night (Parents magazine recipe at recipe.com) so I sprinkled that on top of the filling right before the cheese to make up for the missing bell pepper. My husband said it was restaurant quality. My 5 y.o. son, who hates Mexican food, said it was his favorite thing he has ever eaten besides pizza. (I made him a chile-free version.) Thanks again! You made me a hero!

Simply Lemon Baked Chicken

Reviewed: Oct. 14, 2010
I use this recipe all the time! This was the first time I had ever made a whole chicken and it turned out beautifully. Now I use this recipe as-is, or I vary it just so we aren't eating the same thing all the time (because I use this so often). I have used an orange instead of a lemon and seasoned with Penzey's Bicentennial Rub instead of salt (it's got salt and orange peel in it). I have also stuffed with an onion and fresh rosemary instead of a lemon and rubbed herbs on with the paprika. This recipe is perfect as it is and a perfect starting point for variations. Thank you SO much!

Easy Lemon-Pepper Blackened Salmon

Reviewed: Sep. 8, 2010
I hate salmon, as does my husband, but the doctor recommended he start eating it weekly. This recipe was AWESOME! I almost didn't wake my toddler up from his nap just so I could eat his. In the end, motherly instinct won out and guess what? Even a three year old loves this recipe.

Chicken Paprikash

Reviewed: Sep. 5, 2010
My husband is on a low-glycemic diet, so I substituted quinoa flour for regular flour in the dumplings. Don't do it! My mistake aside, this was AWESOME! We only had smoked paprika instead of regular paprika and it gave the sauce a wonderful, rich smoky flavor. Loved this recipe.
