Spicy and Creamy Vegetable Soup
My husband scolded me for having been married to him for the last 7 years and never serving this to him before. He said it was the best soup I have ever made. Thanks for a fantastic recipe! Alterations: I didn't have celery, green beans or mushrooms on hand, but it was still good. I did have 1/2 cup dry lentils, so I threw them in at the same time as the potatoes to add heartiness since I was missing some ingredients. I also added some salt--not sure how much as I did it to taste, but it was quite a bit. The soup was quite spicy, so I added a little milk to the kids' bowls after I served it, which also helped with the temperature for them. Hubby and I ate it and lived it full strength.

Pico de Gallo Chicken Quesadillas
Loved it! Thanks so much for this recipe. I had some roasted Hatch chiles and used them instead of jalapeƱos. Also, I pulled my bell pepper out of the fridge and it was unfotunately covered with mold. I had some coconut lime roasted corn left over from last night (Parents magazine recipe at recipe.com) so I sprinkled that on top of the filling right before the cheese to make up for the missing bell pepper. My husband said it was restaurant quality. My 5 y.o. son, who hates Mexican food, said it was his favorite thing he has ever eaten besides pizza. (I made him a chile-free version.) Thanks again! You made me a hero!

Simply Lemon Baked Chicken
I use this recipe all the time! This was the first time I had ever made a whole chicken and it turned out beautifully. Now I use this recipe as-is, or I vary it just so we aren't eating the same thing all the time (because I use this so often). I have used an orange instead of a lemon and seasoned with Penzey's Bicentennial Rub instead of salt (it's got salt and orange peel in it). I have also stuffed with an onion and fresh rosemary instead of a lemon and rubbed herbs on with the paprika. This recipe is perfect as it is and a perfect starting point for variations. Thank you SO much!
