Apple Pie Muffins

Excellent, excellent, excellent!!! I took what other people said and kind of ran with it. Instead of chopping and cubing the apples, I grated them with a cheese grater (I peeled them first). It gives you much better distribution. I also used 3 cups of grated apple instead of 2 (about 3-4 apples). I also added some cinnamon and nutmeg to the batter, and nutmeg to the crisp topping. A little bit of nutmeg will go a very long way! I also used an extra TBSP of melted butter for the topping. I don't know why this recipe says it makes only 12 because I made 24, and that was filling them to the top... It's been requested that I make these again tomorrow!

Chocolate Chip Muffins

Could be better. I have a big sweet tooth and these aren't nearly sweet enough (and I used milk chocolate chips). Needs about 1/4 (maybe even a third?!) of a cup of brown sugar in the batter. If you make minis you can get about 48 out of the batter. Definitely a good idea to use 1 cup of milk instead of 3/4.

Rosemary Lemon Grilled Chicken

This was very good. Though, I thought it was a bit too much rosemary. It was never mentioned whether it to use the full sprigs or pluck the leaves and chop. I think my problem wound up being that I plucked the leaves and chopped them. The rosemary flavor was over powering. I didn't have any lemons to zest, but I did have Realemon lemon juice. Other than that, it was actually pretty tasty. Not something I'd make often though. Wish I could give a 3.5 stars.

Easy Sugar Cookies

They taste AMAZING! For all the people who claim their dough is crumbly, even if they think their butter is soft, I ALWAYS melt my butter to almost all liquid in the microwave because our butter stays in the fridge. Do about 30 seconds first, see how melted it is, and keeping going at about 15-20 second incriments until at least half of it is liquid. If you want to let it cool first so it blends with the sugar better, go ahead. :)

Peanut Butter Cups

This was a good, quick, easy recipe to follow. I will say one thing, I advise that you use a teaspoon for the chocolate. I ran out. I also ran out of peanut butter. If you're a peanut butter lover like me, you'll have to heat more. Also, when I ran out of chocolate and was microwaving more, I forgot the butter and vegetable oil. It wound up becoming like those Betty Crocker microwaveable cakes. I recommend using the double boil system with a heat resistant bowl over a pot of hot water. I'm adding a customized version of this if anyone is interested.
