Tex-Mex Turkey Soup

Sooooo yummy! I substitute chicken stock for the water and bouillon cubes, and use 1 can Rotel in lieu of salsa... Delicious recipe, perfect for leftover turkey at Thanksgiving or anytime. I love to make it year-round, but whole turkeys can be hard to find/expensive apart from the holidays... I have used turkey breast or filets during the off-season, but it's best using meat from a whole turkey.

Buttermilk Pie IV

Very good. I used butter instead of margarine and more vanilla. It was very sweet, but that is what a Buttermilk Pie is! :) Top browned a little too dark, probably a problem with my oven. I tried to cover with non-stick sprayed foil and accidentally took off part of that... ended up looking GREAT anyway! Watch the actual time in oven at the end. Mine could have taken another 2-3 minutes in order to set really well.

Jif® Peanut Butter Fudge

I don't use any other kind of peanut butter, so of course we love this fudge! Peanut butter fudge is our favorite kind, so this great recipe gets made several times a year! :)

Peanut Butter Oatmeal Cookies

One of my family's new favorites!!! We used 1 cup butter and 1/2 cup shortening on one batch, all butter on another, and they were so good! Be sure not to overbake, b/c they become very dense.

Delicious! Lighter and airier than my husband's grandma's recipe. We used butter instead of shortening... next batch will have 1/2 pecan, 1/2 plain, instead of all plain!

Southwest Stuffed Chicken

I used Kraft's shredded Mexican cheese, a can of Rotel and black beans for the filling. We also used Planko breading b/c we were out of bread crumbs, so it was a bit crunchier. It looked and tasted great! Giving 4/5 stars b/c a Mexican casserole with the same ingredients would have been easier.
