Baked Rice and Vegetables in Broth

I wasn't really impressed with this. Perhaps I misinterpreted, but I served it for a main dish. It didn't make for a very exciting meal. It was quite filling and healthy as well. I will probably half it next time, serve it as a side and cook it in the rice cooker instead of the oven. I also might try replacing the white rice with brown and the brown with quinoa. That might jazz it up a bit.

Asian Salmon

I really like this way of preparing salmon. The sauce is excellent and it goes great with rice. I omitted the dill because I made extra rice for other purposes, but it wasn't missed. My only complaint is that the suggested portion is huge. I ate half a portion and my partner only ate one, he usually has seconds or thirds. I might suggest serving half servings and having seconds if you're not full.

Parmesan Crusted Salmon

I really liked the flavor and texture of this recipe. However I found that it was very easy to burn, because of all the sugar in the sauce. I will probably make it again and keep it on a lower heat, however I worry that the crust won't form in that case.

Easy Red Beans and Rice

Fair, but not great. I found the red bean mixture to be a bit gooey and bland for my taste. I added a lot of hot pepper sauce and that made it better. I think I will look for another recipe for this dish.

Asian Carryout Noodles

I don't think I'll make this again because it was greasy and bland. It reminded me of really bad Chinese takeout. Maybe I've just gotten too used to food with a lot of spice though...

Mashed Potatoes with Horseradish

I was actually sort of disappionted with this recipe. I think less sour cream, more horseradish and amybe some raosted garlic would do wonders for it. I just thought it tasted like sour cream and it was way too heavy.

African Sweet Potato and Peanut Soup

This is a really good vegetarian soup. If it is served with rice you get a complete protein. When I made it I substituted vege stock for the water, cooked it longer and blended it less. I think if i was making it for company I would blend it thoroughly and top it with a little fresh tomato along with the cilantro. It is a beautiful color.

Corn and Crab Pudding

Rather than serving this as a side I made it the main course of a dinner for my partner and I. It was very good. The flavors melded perfectly, with nothing overpowering anything else. Next time I make it I might add a bit more poblano, or use something hotter like serrano or jalapeno. I don't think that many people here in NM would think this tastes like the southwest since it is quite mild. It would be a great dish for a dinner party, or even a brunch. One could make the mixture, refrigerate it and bake it later in the day. Thanks Christine for a wonderful elegant dish!
