Awesome and Easy Creamy Corn Casserole

I tripled this for a church potluck and there wasn't a bite left! Easy to make and a crowd pleaser for sure. I added a bag of shredded Mexican blend cheese to the batter before baking and had chopped green onions for garnish. I really like the creamy texture. Next time I think I will try adding green chilies to the mix.

Super Easy Hummus

Super easy and much better than the store variety. My son is extremely allergic to sesame/tahini so I never add it to any of my hummus recipes and no one misses it. I like to add lemon olive oil and garnish with chopped cilantro or parsley and pine nuts. This will be my go to recipe when I'm not making edamame hummus.

Cilantro Edamame Hummus

Our new favorite hummus. My son is alergic to sesame, but it still comes out great without the tahini. I just add extra garlic! This is great served with carrots and jimica. I also use bagged salad croutons for simple dipping.

Fettuccine with Sweet Pepper-Cayenne Sauce

My husband said this is a keeper. I was looking for something to make for dinner, uto using ingredients I already had. Since I only had one red pepper, I added chopped sweet onions, fresh spinach and some fresh basil. I also had a package of precooked chicken breast from Fresh and Easy that I added for heartiness. I was worried about the consistency of the sauce, but it wasn't a problem. The little kick from the cayenne was just right. Next time I may add some toasted pine nuts on top.

Overnight Blueberry French Toast

I made this for overnight houseguests and it was a huge hit. I made some modifications based on notes from others. I cut the cream cheese in half and next time I will cut it in smaller pieces and I sprinkled cinnamon between layers. I also used an apple raisin loaf from my local Fresh and Easy store. Next time I will also double the syrup recipe! My neighbor is having a housefull of company this week and I will surprise her with this to give her a hand.

Cowboy Mashed Potatoes

After reading the reviews I couldn't wait to try this. I tested it at a church potluck and hit the jackpot! I added equal amount of peas and corn plus 4 slices of crumbled bacon. Next time I might even add another jalapeno. There wasn't a bite left and even my husband ate veggies he wouldn't touch otherwise!
