This is a fantastic recipe! Although I probably could have raised the heat a bit, it took me 1.5 hours of standing and stirring. I wouldn't change a thing. NOTE: Cutting the wax paper and wrapping the caramels wasn't my favorite activity. I couldn't pass this on to the boys or there wouldn't be any left for guests over the holidays. I'm going to wrap these in little boxes and have them on hand to give to drop in friends.

Yummy Sweet Potato Casserole
This was a good recipe, just nothing special for me. I doubled the recipe, used apple sauce in place of the white sugar, omitted the butter from the "souffle", and didn't double the amount of mix. It was very light and not overly sweet. I liked it alot. The topping was good. I don't know what I was expecting, but I wasn't "wowed." I guess it's because I'm not crazy about overly sweet, and the topping was definately sweet. NOTE: I about passed out at the price of pecans, but there are instances when nothing else will do, and this is one of those instances!
