Vegan Brownies

Reviewed: Sep. 12, 2014
I like the flavor, but the texture was off. I measured exactly per the recipe, I tend to make it that way on the first try. But it didn't hold together, it was a bit cakey and the bottom layer kind of slipped away from the top. (A thin bottom layer stayed on the spatula as I put the brownie on a plate.) Maybe it was the cup of oil. Next time I will use some applesauce to replace some oil and use a non-dairy milk vs water. Then add in chocolate chips or chunks. But by then its NOT this recipe anymore. I think it can definitely be improved upon.

Roasted Red Bell Pepper Soup

Reviewed: Apr. 27, 2013
I shouldnt rate this only because I didn't follow the recipe exactly. But the recipe as written sounded a little bland and I didnt have fresh tomatoes. So in its place I used 2 cans - one diced can and one stewed "mexican" can. I also added fresh chopped basil. I also did not use the roux, it seemed like a step it didnt need. Plus, I only had 2 cups of chicken broth so I used veggie broth for the remainder. But -It was VERY good. I even reserved a small portion of the soup to experiment with and added a little buttermilk to that small portion and it was good as well. Glad I tried this one!

My suggestion: try it without the lemonade added. And if you can find it, use Green River instead of Lemon Lime soda.

Irish Chicken and Dumplings

Reviewed: Mar. 12, 2013
It's a good recipe. But if you enjoy slightly more flavor consider adding in a little garlic, substitute some of the water with chicken broth and add some thyme. I also think you could double up on the current spices in the recipe. Maybe adding in a little of the same spices into your biscuit dough mix.

We love this recipe! It is an annual tradition in my home to make these around the holidays. I do switch up the jam this year it's TOE (tangerine, orange and elederberry) jam and Blueberry jam from a local mennonite shop.

This is a great recipe! It has the perfect amount of sweetness and fluff. My kids love them. I just made 6 extra dry cups of it to keep in reserve for days I don't feel like making it all from scratch, just add the wet when ready to make. Thanks for sharing!

Great recipe! My kids loved it! I loved it...its a keeper! The best thing about this recipe is the veggie flexibility! Dont want 1 cup carrots and 1 cup peas? Then split it up with corn, green beans, or whatever is in the freezer! :-) Thanks for posting!

Sarah's Applesauce

Reviewed: Oct. 2, 2011
This is perfect. My only idea to add is boil the cores and peels in some water then use that water (after you strain it) for your applesauce. More apple goodness!I also suggest tripling the recipe and saving some in freezer bags for out of season enjoyment.

Cheesy Creamed Spinach

Reviewed: Jul. 27, 2011
Great recipe! I should post my own - I made this again, but it was much easier. Jsut had one bag of spinach, so I sauted some onions and garlic, with the salt & pepper. Tossed in the spinach, let it cook down then added 4 tbl of cream cheese and a splash of heavy whipping cream. Stirred, added in 2 tbl parmesan...let it cook down a few minutes and yum!

Fantastic recipe! This was my first time making doughnuts and they turned out great! I admit to using half white sugar and half light brown sugar, for some reason I love to use brown sugar in sweet treats. Thank you for sharing this recipe!
