Chicken Spaghetti Casserole I

Very Very bland flavor. I follow the recipe pretty closely except I substituted tomatoes for the pimento pepper and cream of chicken for the cream of mushroom soup. Overall, I did not enjoy this recipe and nither did my husband. I cannot even come up with additions or suggestions to make it better.

Gnocchi in Fontina Sauce

I love this dish. However, I made some changes to make it a more balanced meal. First I sauted, half a large onion chopped in 4 tablespoons of butter and 2 tbsp of olive oil. Then once cooked down a bit (5-7min), I added cooked deli ham chopped into the onions and saute that all together. In a measuring cup, I put 1/2 cup of half and half and 1/2 cup of chicken broth and microwaved for 2 minutes. I sprinkled 1 tbsp on flour down on top of the onion/ham mixture and cooked for 1 minute then added in the cream/broth mixture. I let that all heat through. I then added the cubed fontina and stirred till almost blended. I then added a handful of frozen peas at the very end. Overall, it was delicious and my husband was very excited to eat it! Great recipe!

Dessert Crepes

Awesomely good! I used my Pristiq non-stick skillet. If you have one, definitely use it. You can make huge crepes with it just by putting the batter in the middle and turning the whole skillet by the handles in a circular motion to spread it out. My husband was a little worried, but than he admitted it was a great idea and worked out well. Love this recipe Ann!

Take-Out Fake-Out Pollo Con Crema

Just made this delicious meal tonight. I cut the recipe in half because its just me and my husband. I did change a few things because I did not have all the ingredients and I wanted to make it a little more healthy. I did not use the mushrooms because I forgot to buy some. However, I opted out the heavey cream and used half and half ( if you make the roux accordingly you can use any kind of milk you have on hand because it will thicken it.) Additionally, I added more hot pepper sauce and used just plain old chilli powder (1 tbsp). Also, my husband thought we should have added more hot sauce and red pepper flakes, which I agreee, but this depends on how spicey you like things. One trick: Heat the chicken broth and milk in the microave first until warm because it thickens more quickly in the pan without burning the milk. Other than that I followed the directions exactly. I served it with rice and mexican cheese. It was so good. We have tons of left overs. We cannot wait to eat it tomorrow. Also, I think if you follow the recipe exactly - you definitely get way more servings than 12 more like 16.
