Not bad, not great. They need to be very cold to be handled easily. I took another users suggestion and added powdered sugar in hopes to prevent the texture from being too "gooey." I also put the pineapple into a sieve over a sauce pan and placed a paper towel and can of soup on top to squeeze out any extra moisture. I reduced the pineapple juice to a syrup and added it back to the mix to enhance the pineapple flavor other users said this mixture lacks. Again, not bad but not great. It was a good way to use up an extra coconut I had lying around.
