Pineapple Coconut Snowballs

Not bad, not great. They need to be very cold to be handled easily. I took another users suggestion and added powdered sugar in hopes to prevent the texture from being too "gooey." I also put the pineapple into a sieve over a sauce pan and placed a paper towel and can of soup on top to squeeze out any extra moisture. I reduced the pineapple juice to a syrup and added it back to the mix to enhance the pineapple flavor other users said this mixture lacks. Again, not bad but not great. It was a good way to use up an extra coconut I had lying around.

Churros

These must be rolled thin. Don't try to make these the thickness you see at fairs or the inside's will be "raw." Overall it was a great recipe, and was the only fried desert that worked out at a "fryer party" my friends had to use the fryer they got for their wedding.

Chipotle Shrimp

The family liked it a lot, but the flavor wasn't pervasive. I used precooked shrimp so the next time I will use raw. Hopefully they will pick up more of the flavor. Also the Chipotle's may need a finer mince.

This was alright, but it was very tart. When I tried to compensate with the extra soda it felt very sweet. It would be difficult to drink a lot of this. Not bad if you like tart drinks.

Spicy Coconut and Lime Grilled Shrimp

Very good, but ended up pretty salty. I'll use low sodium soy sauce next time. This can be used as a side dish or use larger shrimp and make it a main course. I altered this recipe using half the amount of jalapenos and used thyme instead of cilantro (as I am not a fan.) Turned out well.
