I took a large butternut squash, quartered it, and put it in the oven with a few potatoes and a few large carrots(washed but not peeled).I sprinkled on some olive oil, added about 1-2 tsp kosher salt and 4-5 whole cloves of garlic. Then I stuck it in the oven at 350 until the veggies were soft. After the veggies were cool enough to touch I peeled them and added any juices at the bottom of the casserole to a large pot along with the veggies. Then I added the broth, and other ingredients in the original recipe. I also added the slightest amount of clove to add a bit of kick.
