Daisy Brand Quiche
I made this recipe, but left out the mushrooms and replaced half the sour cream with cream cheese. Brought it to a work function and got compliments. Hubby really liked it, too.

Summer Squash Bread
After reading the other reviews, I modified the recipe in the following ways: reduced white sugar to 1 1/4 cups; substituted 1 c veg oil for 1/2 c veg oil and 1/2 c applesauce; reduced nutmeg to 1 1/2 tsp. Also I only used 1 c shredded summer squash with 1 c mashed overripe bananas, and I sprinkled brown sugar on top. This made it more of a banana-squash hybrid bread, and it was denser than regular banana or zucchini bread, but still tasty. It's almost like a breakfast bread or coffee cake.

Easy Swedish Pancakes
This is the most accurate yet easy recipe for Swedish pancakes that I've been able to find. (I'm also from near Rockford) Swedish pancakes are supposed to be really thin, like crepes, and this recipe gives the right consistency. Traditionally, they are served with lingonberries, powdered sugar and butter. You can also make them savory with other toppings, for dinner. You might want to cut down on the sugar in the batter, though.
