I just made these and they turned out really well! I made 12 smaller muffins instead of 6 big ones. I baked them at 350 (instead of 375) for 25 minutes (instead of 30 minutes). I sprayed the muffin pan with cooking spray first and I had no problem with the muffins sticking to the pan. I made a few of my own revisions to the recipe. For the flour I used 1 cup of white and 3/4 cup of whole wheat. I cut back the amount of sugar slightly...instead of 1 1/4 cups of white sugar I used 1/2 cup of white sugar and 1/2 cup of brown. I used 4 teaspoons of baking powder instead of two because I like my muffins extra fluffy. I also omitted half the butter (I used 1/4 cup instead of 1/2) and added 1/2 cup of apple sauce. I doubled the amount of cinnamon (1 tsp instead of 1/2 teaspoon).
I make muffins all the time for my husband to take to work and I will definitely be making these again since they were so moist and delicious! They haven't even completely cooled since taking them out of the oven and there's already four missing. =)
