Greek Style Potatoes

Excellent base recipe. I used a 1.5 lb bag of fingerling potatoes and they were great. I used them whole but next time I will try thick slices. I par boiled them and cut baking time down to 25 minutes. I also used lemon pepper, extra garlic, less water, less oil. Important!! Zest the lemon and add the zest to the mix. YUM!!

Scalloped Cabbage

Great way to use cabbage. Quick and easy....but....Definitely use Italian seasoned bread crumbs instead of the saltines. I also added garlic with the onion, more salt and pepper and 3/4 cup of shredded mozzarella cheese. Next time I make this I wouldn't even bother putting it into a casserole dish and baking. It tasted better with less bread crumbs and straight from the pan to the plate.

Mexican Casserole

Great jumping point recipe. Like many others I: -Sauteed garlic and onion before adding the chicken. I used whole frozen chicken breast pieces and cut them with the spatula in the pan after they cooked half way through. I hate cutting raw chicken on a board. :-) -I did not drain the beans so no added water was needed. -I used half a bag of frozen corn instead of canned. -I also used a whole jar of salsa. -I added beans,corn, seasoning and salsa to my stainless steel pan and put the whole thing in the oven to avoid using another dish and have less cleaning. :-) The whole family loved it served with a green onion cilantro salad.
