Broiled Tilapia Parmesan

My husband and two very picky teenagers LOVED this dish! I reduced the parmesan cheese slightly and added crushed Tuscan flavor pita chips for a little crispiness. It was so easy, fast, and delicious. My husband said he would order this in a restaurant. This will be a keeper!!

Easy OREO Truffles

WHO KNEW that a bag of Oreos could produce such amazing tasting truffles!!! Made these last night with my two daughters and they were not only simple, but DELICIOUS and look like store bought truffles! I followed the recipe exactly, using a slotted spoon and fork for rolling in the chocolate, and it worked perfectly. I did refrigerate the balls before dipping. Also, I made double the amount of balls (two pkg Oreos and cream cheese) and only one recipe (2-8oz pkg.)of the melted choc. and I had plenty of choc. for all of them.

Fresh Peach Pie I

My family LOVED this. My husband said it was the best peach pie he's ever had. I sliced the fresh peaches super thin and made a very pretty spiral design. My only complaint, and the only reason I didn't give it 5 Stars, was that it never really "set" -it was a bit on the runny side, but that did not affect the flavor...it was very fresh tasting and delicious! Maybe more cornstarch next time. Yum!

Grilled Fish Tacos with Chipotle-Lime Dressing

Wow - this is a keeper. Even my picky kids loved it. We don't like a lot of heat so I reduced the adobo sauce a LOT, but it still had the smoky flavor and was delicious! I also added just a pinch of sugar to the dressing and it really brought out the flavor.

Chicken Cordon Bleu II

Oh myyyy this was goooood!!!! I made this pretty much exactly as stated. I pounded the breasts flat, so only needed to cook about 20 min, and used Sauvignon Blanc. AMAZING. Definitely a keeper!!

Satiny Chocolate Glaze

So incredibly easy and GOOD! I put all ingredients in a Pyrex measuring cup, microwave for 50 seconds, stir, and it's done! Makes just enough for one Bundt cake.

Baked Ziti II

I followed others' suggestions and made a few changes: I used only 15 oz. ricotta, added 2 heaping T. sour cream, I used 1 1/2 lbs. mozz cheese, added 1 lb. seasoned ground beef, and I didn't mix the sauce in with the cheeses and pasta, I layered the ingredients, like a lasagna. DELICIOUS!! After changes: 5 stars!!! Definitely a keeper.

To. Die. For. That is all I need to say. I used Cream Cheese Frosting II, and left out the nuts (not a nut person) and it was absolutely heavenly. I will make this again and again!

Simple Whole Roasted Chicken

Wow! This was really, REALLY good! I am amazed at how juicy this came out - without butter, or basting!! The spiced flavor was really something different and WONDERFUL. I did double the spice mix, as recommended by reviewers, and I also added broth to the bottom of the roasting pan, which made a fantastic gravy. This will be a keeper, for sure. :)
