Roasted Vegetables

This is a variation of a recipe I have made for years. Never tried it with squash and it was awesome! Made it exactly by the recipe except carrots instead of sweet potato. Delicious!

Apple Squares

Fabulous! The second time, I subbed soy flour for 1/3 of the flour, and Xylitol for white sugar. Just as good that way. Wll try subbing whole wheat flour for 1/3 next time. Oh, and I doubled it the first time, tripled it the second. No problems. Rave reviews from everyone who tried them!

Vegetarian Stuffed Peppers

This was FABULOUS! I wanted to make it exactly like the recipe, but did use a mixture of brown and wild rice which I think was delicious, and used soy cheese instead of parmesan. Also, I mixed 1/2 the tomato sauce with the rice mixture and put the rest on top. It would have been just as good without any sauce at all. Oh, and I used a mixture of red, green and yellow peppers. Had some rice mixture left over, and made a tiny "meatloaf" out of it.

Heavenly White Cake

My 12 year old daughter made this for her first "scratch" cake, with verbal assistance only. It was delicious! We added the extra milk and folded in the merengue. It sat over night, covered, and we decorated it next day. It was perfectly moist and delicious. It sank just a bit as it cooled, but probably because it cooled all the way before we remembered to take it out of the pan. It's good for decorating, because it remained flat and didn't get that hump in the middle that cakemix cakes get. May try some other recipes but this will be a "go-to" when we need perfect results.

Chewy Chocolate Chip Oatmeal Cookies

I followed others' suggestions (as to salt and baking soda) and mine came out too fluffy and cake-like. Next time I would decrease salt but leave the lower amt of baking soda. I also used gluten-free plain flour, so that may have affected the finished product. Overall, quite tasty, but I prefer a chewier cookie.

Rice With Olives And Green Chile Peppers

This was REALLY good but I only gave 4 stars because it's not exactly healthy! I doubled the rice (and water), le ft out the olives because 2 of my 3 kids won't eat them, added some extra cheese because of the extra rice. Did NOT double the sour cream, 16 oz seemed like plenty. I confess I did not measure the cheese but probably used abt 3 cups in all. Finally, I divided the rice mixture , (did not do it in layers) and added taco-seasoned ground beef to 1/2, in 1 dish, for the carnivores, and added black beans to the other 1/2, with a little creole seasoning, for me and my youngest who doesn't like meat. I will definitely make this again.

Best Ever Chicken Casserole

too bland for me, and very dry. IF I make it again, I will add chicken broth to the soup/mayo, and maybe add cheese for extra flavor. A can of diced green chilis would probably help too!

Baked Tofu Bites

My carnivore hubby declared it "ok" but my 10 year old son and I ate the whole batch in a few minutes as a snack. Definitely make a double batch, because it is a little trouble, for a small quantity. I froze the tofu, then thawed and pressed it. Mine came out crispy with a chicken-y texture. Would make a good sub for grilled chicken in an asian salad.

Vegetarian Sandwich Spread

OMG, this is fantastic! My family has been inching toward vegetarianism for several years, and the hangup is always what to have for lunch. We had tried the frozen veg hotdogs and they were worse than awful. Tried this with just veja-links and mayo (didn't have pickle relish, and forgot about the onion) and my hubby and I loved it. We'll find out when the kids get in from school whether it's kid-friendly.

Excellent with no modifications. I am NOT a cook and had no problem with the recipe. The cookies disappeared so fast I never even got to frost and decorate them! I was going to try a different recipe today, but my family insists I use this one again.
