Cashew Crusted Chicken

GREAT recipe - and so easy! I cut the chicken into bite-sized pieces, which cut the baking time to 25-30 minutes. Also added dried Chinese chili peppers to add a "zing" and make it more Asian. Quite delicious. Thanks!!

Aunt Maria's Pudding Cake

This is the most flavorful and EASY cake to make! I omit the poppy seeds, and add a ribbon of 1/4 c chopped walnuts, 1/2 c sugar and 2 T brown sugar and 2 T cinnamon to the middle. I just pour 1/2 the batter in the pan, sprinkle the mixture over the batter, and pour the rest on top. Same baking. Adds a nice touch, especially if you like a hint of cinnamon!!

D'Amaretti Biscotti

Great biscotti. I used orange zest instead of lemon. Another addition to the Christmas gift baskets this year. This and the Cappuccino in a Jar recipe are a great hostess gift for all those holiday parties!

Pineapple Upside-Down Cake VI

Was my first attempt at a pineapple upside-down cake, and I think I did alright. The only thing I couldn't swing was melting the sugar. Everytime I got it to melt and tried to transfer the mixture to the 13x9, I ended up with a saucepan full of hard toffee. I think I need a little more practice in the baking arena!! I opted to mix brown sugar and butter and layer that in the bottom instead. My grandfather loved it after all!!

Original Irish Cream

So good...and so easy! It is best to let it sit for a few days before serving - the flavors blend together much better. But inexpensive to make and tastes better than store bought. Perfect for an addition to the holiday gift baskets!!

Pesto

This recipe was amazing. Very simple - extremely good. I added a bit more parmesan, as well as a dash of sea salt and some black pepper. I added this to gourmet gift baskets at Christmas last year, and friends are now asking me to make it again for them this year!

Cream of Asparagus Soup I

Mmm...mmm...good!! I did do a bit of tweaking, per past recommendations and what was in my fridge. Instead of the water and condensed chicken broth, I used 5 cups of chicken broth. Also used 4 teaspoons chicken boullion, 2 potatoes, one tablespoon chopped garlic, and a cup of sliced mushrooms. Also substituted worchestire for soy sauce, and added a dash of paprika. Pureed the whole thing. My brother ate the batch I made for his family...without sharing any with his wife. He said he couldn't help himself!

Zuppa Toscana

Delicious recipe, but very time consuming. I used homemade spicy Italian sausage from an Italian deli. I browned it on the stove top, then cut it in half lengthwise and cut that into bite-sized pieces. The spices in the homemade sausage really added to the flavor. Also substituted Swiss chard greens for the kale, and really liked the flavor.

White Chili with Ground Turkey

This was GREAT and so easy to make. I used 4 cans of chicken broth so make it less soupy. I also used whatever cheese I had in the house, which ended up being 1 cup mozzarella and 1 cup cheddar. Still mighty good!! Thanks for sharing!

Roasted Rack of Lamb

Super easy, and can be scaled up to as many as you wish to serve. I made this with 6 racks of lamb for a sit down dinner of 24 people for Christmas. Doesn't even need the mint jelly. It's great paired with baked parmesan fries!

Baked Potato Soup

Delicious!! I only made a few changes, and they were only based on available ingredients. 1. My russet postatoes were tiny, so I used six. I baked them the day before, chilled them overnight, and diced them with the skins on. 2. I used 1 tablespoon of fresh basil, since I has some left over from making pesto. 3. I added a little red pepper and white pepper when I added the other spices. 4. I didn't have cream, so I used whole milk. I served it with shredded cheddar and the bacon, with asiago cheese bread on the side. Would definitely make this again.
