Note that sugar should be added gradually to eggs in double boiler and should be whisked not just stirred. Don't add the wine until sugar and eggs have a custard-like consistency or the alcohol will burn off by the time it's ready. It can also be served at room temperature.

Spicy Salmon with Caramelized Onions

Wow! This dish came out way better than I could have imagined. The paste forms a nice crust on the salmon making it have a cajun feel to it. The spiciness is nicely offset by the sweetness of the caramelized onions. It's also super simple to make. I did double the cayenne because I like spicy and omitted the onion powder (didn't have any.) I also used a whole onion which was the right choice. One note - if the salmon is thick then use a lower heat because the paste will burn the top while the inside remains raw.

Easy PHILLY OREO Cheesecake

This is a cheesecake lover's cake. It was very rich and dense. It was also super simple to make. I followed the recipe exactly. I would add more oreos to the batter if I made it again.

Glazed Almond Bundt Cake

This cake was great. Before turning it out of the pan I poked holes in the bottom and poured some glaze over it that way it soaked throughout the whole cake.

Avocado Tzatziki

I love regular Tzatziki and I guess I should have read the recipe before making it to see that there was no yogurt. It was ok but tasted more like guacamole than tzatziki. Next time I will go with my regular tzatziki recipe and add some avocado into it.

Cinnamon Spiced Coffee

This was a great way to add flavor to coffee. I drink my coffee black so it was too sugary for me and I will try it with just the cinnamon next time.

Apple Fritters II

The base batter was easy to make but a little plain. I added 2 tbsps of cinnamon to the batter and then more on top with powdered sugar. I also cubed the apples to make the fritters come out easier.

Seafood Sandwich

No Tomato Chili

This was great! I forgot to buy chili sauce so I used Hot Mexican Chili Powder and some crushed red pepper flakes. It was just the right amount of heat for me and no yucky tomatoes!

Buffalo Chicken Chili

This was the most divine chili I have ever had. The only change I made was I ran out of chili powder so I threw in a little cayenne pepper. The heat was just right and the flavor was perfect.

Cauliflower and Egg Salad

Angry Shrimp with Tuscan White Beans

This was quite good but not spicy enough for me. The recipe itself could be written better....let the beans boil for a few minutes so that it thickens otherwise you will just have beans and broth. Also 1 egg was not enough for the amount of shrimp.

Basil Goat Cheese Pizza

This was excellent way to eat pizza without it being too heavy. I used my own dough and a jarred red sauce with basil. Also added a small amount of fresh mozzarella. It was perfect!

Baked Tilapia in Garlic and Olive Oil
