Chicken Enchiladas

Reviewed: Sep. 13, 2010
Loved this dish. Used jalapeno instead of green chiles to add spice. But otherwise it was perfect as is.

Chicken Makhani (Indian Butter Chicken)

Reviewed: Sep. 13, 2010
I have never had this is a restaurant so I have nothing to compare it to but it tasted like chicken cacciatore to me. It was easy to make so I may try it again and add much more spice to it.

Real Hummus

Reviewed: Sep. 11, 2010
I loved this recipe - much better than anything I have ever bought in the store. I omitted the lemon juice and reduced the salt to 1/2 tsp. Next time I will add other ingredients to jazz it up but this will always be my base recipe.

Richer Than Rich German Chocolate Ice Cream

Reviewed: May 15, 2010
I don't really like chocolate ice cream but couldn't pass this up when I saw the title. I made it exactly as written but halved everything. It was incredible. I may add more pecans next time since they're my favorite.

Firecracker Grilled Alaska Salmon

Reviewed: May 7, 2010
Loved this dish! Used evoo b/c I didn't have peanut oil. I grilled it and then ate it the next day - I can only assume it would be even better right off the grill. Will make again and again.

Ciabatta Bread

Reviewed: May 7, 2010
It was extremely humid when I made this bread so I don't know how much that affected it but when I took the dough out of the bread machine it was almost liquid. I had to add much more flour to get a dough consistency. It did rise some but not enough to be able to cut in half for a sandwich. It was also hard as a rock the next day (could have been from the extra flour.) The pieces I was able to salvage did taste good though.

Baked Tilapia in Garlic and Olive Oil

Reviewed: May 7, 2010
I couldn't believe how flavorful the fish came out. I only did the garlic and olive oil and served the fish plain with grilled vegetables. It was a great, light meal.

Orzo and Tomato Salad with Feta Cheese

Reviewed: Apr. 27, 2010
This made a nice lunch. It was easy to prepare the ingredients while the orzo was cooking. I used cherry tomatoes and herbed feta which gave it a kick. I also left out the lemon juice and just tossed with olive oil. Will add more olives next time.

Asparagus with Parmesan Crust

Reviewed: Apr. 26, 2010
The balsamic drizzle made the meal. It was a nice complement to a simple baked fish main course.

Quick Poached Salmon with Dill Mustard Sauce

Reviewed: Apr. 26, 2010
This was really easy to make. I used regular mustard instead of dijon and the sauce over powered the dish. I will try again with either less mustard or dijon.

Oat-N-Honey Bread

Reviewed: Feb. 18, 2010
I loved this bread. I used a 1/4 cup of honey per the other reviews. It came out tasty and moist. It was a little too crumbly for sandwiches (bringing them to work) but I loved eating it with apple butter.

Whole Wheat Bread III

Reviewed: Feb. 18, 2010
This was the best whole wheat bread I have made (I'm new to bread making.) I left out the sugar. It was moist but it was also very crumbly when I brought my sandwich to work (I had to eat it with a fork.) I'll keep it as a breakfast bread and continue hunting for a sandwich bread.

Chocolate Chip Cookie Dough Cheesecake

Reviewed: Dec. 31, 2009
This was a silky smooth cheesecake. I used refrigerated cookie dough which worked fine and made things easier. I also left out the topping per the other reviewers and just cut up more cookie dough to place on top after the cheesecake chilled. Will definitely make again.

The Best Rolled Sugar Cookies

Reviewed: Dec. 31, 2009
I'm not sure if I did something wrong but the cookies barely held their shape. After the first batch I tried rolling the dough thinner and then thicker. Nothing really worked. The taste was great. I added more sugar per the other reviewers but then when I decorated with icing it was too sweet. Also for bigger cookies lower the oven temperature or they will burn on the outside and be raw on the inside.

Honey Roasted Red Potatoes

Reviewed: Dec. 31, 2009
These did not roast evenly for me - next time I will stir them more than just once. The ones that did roast properly were excellent. Will definitely try again.

Praline-Pumpkin Cake

Reviewed: Dec. 3, 2009
This was so simple and tasty. A great way to dress up a box mix. I put it in at 375 by accident so the praline part burned a little but everyone still thought it was great and said it didn't taste burnt at all.

This was much better than I thought it would be. Lots of flavor. The one change was I used chicken broth instead of white wine.

Pumpkin Spiced Latte

Reviewed: Nov. 3, 2009
Wow. I'm so happy I found this. It was so good I made it 2 days in a row. I don't drink whole milk so I used 1.5 cups of 1% and 1.5 cups of half and half. I also followed the other reviewers and used 1 tsp vanilla and 1 tsp pumpkin pie spice. I only have flavored coffee in the house so I used apple pie coffee and made my usual amount for hubby and myself. The wand hand mixer worked well and saves cleaning the blender. Thanks for posting!
