Marinated Wild Salmon

This was quite good but I found the balsamic taste a little over powering. I did use regular balsamic instead of white...not sure if that was the problem.

Aw-some Coleslaw

I am NOT a fan of cole slaw so when hubby requested it I said OK only if I can make it. I followed the recipe exactly and it was perfect. Not too sweet, not too tangy and not a ton of liquid. I think I ate more of it than he did!

Spinach and Leek White Bean Soup

I found this to be a little bland. I had to add a lot of salt and pepper while eating. It could have used grated Parmesan or cayenne.

Cauliflower and Egg Salad

I really enjoyed this. It tastes just like egg salad but but the nutritional benefits of cauliflower. I make exactly as written and served with whole wheat pitas.

Dragon's Breath Grilled Salmon

This was an OK dish but I was looking forward to spicy and didn't get it at all. Next time I won't seed the jalapenos and/or perhaps add some cayenne to the sauce. The sauce was flavorful in itself and it was a simple meal to make.

Ghirardelli® Chocolate Bread Pudding

WOW! This was an intense chocolate flavor and absolutely delicious. I did halve the sugar per the other reviews and I'm glad I did - the chocolate chips gave it the right amount of sweetness. I also used 2% milk instead of whole to save some calories. Note that the bread should be about 4 cups. I learned from my last (disastrous)attempt at bread pudding and measured the bread as I cut it. 4.5 cups was equal to 3/4 of a baguette for me. If I had used the whole loaf it would have been too dry. If you like chocolate this is a must try!

Salmon Avocado Salad

Loved this! I broiled the salmon without butter and then followed the recipe exactly. I ate it for lunch the next day and it was excellent and filling.

Garlic Balsamic Shrimp

I made exactly as written except I cooked in a skillet instead of skewering. The dish was missing something...I added salt and pepper after it was served and it helped a little. Will make again but need to add some spices.

5-Minute Olive Hummus

This is my favorite hummus. So much better than the one in the supermarket. I omitted the basil and next time will reduce the lemon juice but it is a definite keeper.

Cotechino con Lenticchie

This was surprisingly good - I would never have thought of this combination. I used hot italian sausage and cooked the lentils in half water and half broth and added garlic per the other reviews. The lentils were still a little plain and we had to add salt and pepper at the table. I may cook in all broth next time or season the water/broth.

Amazing Pecan Coffee Cake

I served this within a few hours of making it and it was pretty good. However, the leftovers the next day were AMAZING. The cake was moist and the topping was the perfect amount of sweetness. I followed some of the other reviews and doubled the topping, toasted the pecans, crumbled the topping with soft butter (not melted) and added 1 TBSP of flour to prevent sinking. I also used 1/2 c of applesauce in place of 1/2 c of butter and did half almond extract and half vanilla extract.

Roasted Vegetables

I would give this ten stars if I could. Found the recipe on a whim when I needed to use up root veggies. The balsamic added a great sweet flavor. I only had dried rosemary and thyme and think using fresh would definitely make the dish even better.

Grandma's Moist Cake

This was a good, basic yellow cake mix. I halved the recipe to make 12 cupcakes. I served with a chocolate cream cheese frosting which overpowered the cake. I think a plain chocolate frosting would go better with this cake.

Seared Salmon with Indian-Inspired Cream Sauce

This was just ok for me. The only change I made was halving the broth to allow for a thicker sauce. It seemed to be lacking flavor. I think I would have prefered more spices in addition to the curry powder.

It doesn't get much simpler than this to make a flavorful dish. I increased the chile pepper because I like heat. Served with israeli couscous and side salad.
