Zesty Kale

This made a really nice salad. Nice change from massaged kale salad with olive oil. Threw in some cherry tomatoes and red pepper flakes as well.

David's Yellow Cake

This was a great yellow cake. I used 4 whole eggs instead of 8 yolks and it came out moist and fluffy. I used it in a trifle and it was perfect. A definite keeper for all yellow cake needs.

Fudgy Brownies I

I made these as a base to my S'mores pie. They were very fudgy and moist. I added some chocolate chips but they weren't necessary. I made as written except that I added the second 1/3c of oil before the eggs as the other reviewers suggested.

Fabulous Pesto Pasta Salad

This was pretty good. I threw everything in the food processor to make the dressing. I used green olives because I didn't have black....didn't meld as well with the salad. Feta might also go well with it. A nice summer meal.

I screwed up the recipe and they still came out great. (I meant to replace 1/2 the butter with applesauce - well I did but then added another 1/2 cup of applesauce by accident so the there was an apple-almond flavor.)

Coffee Shortbread

5 stars for taste but 1 star for ease of use. I followed the previous reviewer and made the instant coffee into a paste. I also added an additional tbsp of butter. The dough was very crumbly even after refrigeration. I wound up pressing and shaping the cookies by hand. But they were delicious! I enjoy black coffee so the strong flavor was perfect for me. My husband uses sugar in his coffee but he liked them as well.

Peanut Butter Pie I

This was a rich, delicious dessert. I used chunky PB as a personal preference and reduced the sugar to 3/4 cup. To make it creamier increase the heavy cream to 1.5 cups. Definitely a keeper.

These were quite good but not spicy at all - and I doubled the red pepper flakes. I used raw shrimp but other than that I made as written and served over rice for a simple meal.

Shrimp Enchiladas

This was good but took closer to 40 minutes for the shrimp to cook through. Also I poured enchilada sauce over the top before cooking which gave it an authentic Mexican flavor.

Greek Lentil Soup (Fakes)

This was a great soup. I used a whole can of tomato paste but the rest was as written. I didn't need to simmer for 30-40 minutes....the lentils were soft when I added the paste in. I did need to add salt & pepper at that point. When serving I spilled the red wine vinegar so it was much more than a tsp but it really made the meal.

Cauliflower Couscous

Flank Steak with Garlic Wine Sauce

This has been sitting in my recipe box for 11 years and I can't believe what I've been missing. It was absolutely delicious. I did get lazy when cooking so I sauteed the green onions in butter and then added the wine. when it reduced and thickened I cooked the steak. I sliced the steak immediately and then added those juices into the sauce. Cooked on high for a few minutes and then added the rest of the butter.

This was excellent. It had a lot more flavor than I expected. I made exactly as written but I intended to eat it throughout the week so I boiled the pasta but stored it separately until I was ready to eat.
