Warm Goat Cheese Sandwiches

Reviewed: Dec. 26, 2008
This was an excellent, easy, light meal. I used a tortilla and added red onion. A perfect way to eat yummy goat cheese.

Baked Ziti IV

Reviewed: Dec. 26, 2008
This recipe was just ok. I used ricotta instead of cottage cheese like other reviewers and my own homemade sauce. The sour cream just didn't do it for me.

Death by Chocolate

Reviewed: Dec. 26, 2008
Everyone loved this dessert. I made my own whipped cream and toffee pieces with chocolate chips. Next time I will use a different cake mix though. This is the 2nd time I've used Betty Crocker's German Choc Cake mix and the 2nd time it came out very dry. I will try a moist choc. supreme mix next time. Other than that it was easy to make and was a light dessert after a heavy meal.

Roasted Brussels Sprouts

Reviewed: Dec. 16, 2008
I thought these were excellent. I didn't like having to shake them every 5-7 minutes and might see what happens if I don't but they were quite tasty.

Easy Sausage Stuffing

Reviewed: Dec. 10, 2008
I made this to go with our leftover turkey. I used Premio hot italian sausage because it's what I had. It came out quite well although it did stick to the bottom of the pan.

German Chocolate Cake Frosting II

Reviewed: Dec. 10, 2008
I usually make the cake and frosting from scratch using an elaborate recipe. But I had to make it on a week night so I cheated and used boxed german choc. cake and this as filling. It was delicious and easy to make. I will use it again even if I make the cake from scratch.

Pumpkin Pancakes

Reviewed: Nov. 28, 2008
These were excellent! Light, fluffy and tasty. No need for butter just add a little syrup. I used the entire 15oz can of pumpkin and added chopped pecans. The leftovers were even great the next day.

Beef Burgundy I

Reviewed: Nov. 13, 2008
I did not care for this. There was no flavor and way too many onions. It was like onions in broth with a few pieces of meat in it.

Autumn Cheesecake

Reviewed: Nov. 11, 2008
This was a delicious cheesecake. I gave it 4 stars instead of 5 because you can use any cheesecake base with the apples. Per the other reviews I used 3 pkg cream cheese, 3 eggs, 3/4 cup sugar and 2 tsp vanilla. I also used cinnamon graham crackers as the crust. I had to bake for an additional 30 minutes and it was hard to tell if the cake was done because the apples covered the top. But the result was smooth and creamy and the apples made a nice bite. Would definitely make again.

Cottage Cheese Chicken Enchiladas

Reviewed: Oct. 29, 2008
These were quite tasty. I was concerned with the cottage cheese and my husband but he liked it a lot. Would definitely make again.

Chicken Paprikash I

Reviewed: Sep. 15, 2008
I'm giving this 4 stars instead of 3 because I could not find hungarian paprika but made the recipe anyway. I added cayenne pepper but still found it somewhat bland. It was easy to make. I used chicken legs and kept them in the pan the whole time even while I cooked the onion. I also omitted the white wine and increased the amount of stock and sour cream per other reviewers' suggestions. I will definitely try it again if I can find the paprika.

Honey Bun Cake I

Reviewed: Sep. 15, 2008
I gave this 4 stars instead of 3 because I think I made a mistake with layering the batter. I used a bundt pan and layered the batter with the brown sugar mizture. As a result when I got a bite without the brown sugar the cake tasted very bland. I would mix the brown sugar in with the batter next time. I added additional cinnamon per other reviewers suggestions but followed the rest of the recipe exactly. It was NOT too sweet at all. In fact someone who doesn't like sweet said this was the best cake I ever baked. Also the name is deceptive- it more of a cinnamon roll/bun cake than honeybun. For me it was just ok but very easy to make.

Spinach Quiche

Reviewed: Sep. 15, 2008
This was so good I didn't even miss the crust. I was concerned because I don't really like cottage cheese but it gave an interesting texture to the quiche. I used bread crumbs because I didn't have croutons and I think it was a mistake. I will definitely try again with croutons.

Dark Chocolate Cake I

Reviewed: Sep. 2, 2008
This was an execllent cake! I followed the other reviewers suggestions and used espresso instead of coffee. I also let the coffee cool completely. I forgot to add the chocolate chips but it didn't need it. I did let the cakes cool completely and they came out of the pans very easily. I used red raspberry jam in between the layers and chocolate frosting. It was to die for!

Chickpea Macaroni Salad

Reviewed: Sep. 2, 2008
This was very tasty when I first made it but seemed to lose it's flavor by the next day when I served it. Definitely a keeper if served within a few hours.

Extra Easy Hummus

Reviewed: Sep. 2, 2008
This was the closest I'm ever come to store bought hummus. The cumin was a little over powering but I will definitely make again and play with the ingredient amounts.

These were a huge hit at a BBQ with my ultra picky family. I followed the recipe exactly but marinated the chicken for about 6 hours. A definite keeper!

Tiramisu II

Reviewed: Aug. 18, 2008
Msde this for a tiramisu fanatic who goes to different bakaeries in search of the perfect recipe. He LOVED it. I followed the suggestions of soaking the lady fingers in coffee and I increased the coffee/rum mixture by about 4x. I also wait 36 hours to serve it as suggested. It was also easy to make considering I never did it before. I used mini-springform pans which made it even easier.

Sauteed Garlic Asparagus

Reviewed: Aug. 18, 2008
Loved this recipe. Used 1 TBSP olive oil and 2 TBSP butter as the other reviews suggested. I didn't need 10 minutes though....the garlic was starting to burn and the asparagus tasted done after 5 minutes. Went great with the Grilled Marinated Swordfish....definitely make again.

Grilled Marinated Swordfish

Reviewed: Aug. 18, 2008
This was an excellent dish. Flavorful and easy to prepare. I left out the white wine (didn't have any) but otherwise didn't change a thing. I was worried about it having too much soy sauce based on other reviews but it didn't stand out at all. A definite keeper!
