Raspberry and Almond Shortbread Thumbprints

Very, very good! I love that they only have 4 ingredients for the dough. I made them with apricot preserves and they were delicious. Needed to make more of the glaze, so I would increase those ingredients to 1.5X. I also had to add more milk to make it the consistency I wanted. They look so pretty and taste so buttery. Great cookie to make as a gift!

Tres Leches (Milk Cake)

This is such a unique cake. I made it for dessert for a Mexican themes dinner I brought someone. She's since made it a couple times for others as well. I was nervous about putting the whole amount if liquid on top, but it turns out great as is. If you don't want it soaked, just pour about 3/4 of the liquid on top.

Amish Breakfast Casserole

This was excellent with a few changes I took from several different reviewers. First, I used 8 XL eggs, but would increase that to a full dozen next time! I can't imagine using only 6 like the recipe reads! There was hardly enough with 8. I did season the hash browns with a good amount of salt and pepper. I also added a sprinkling of garlic powder. Since I had to be somewhere early, I assembled it the night before, refrigerated it overnight, set it out for 1/2 hour before baking. It took about 45 minutes. I will definitely make this again. I loved the taste of the hashbrowns in it! Very yummy.

Apple Crisp II

A-MAZING! I took the advice of a few different reviewers: added NO water and doubled the "crisp" topping. Eek! That was way too much topping for me. Next time I'm not changing a thing. I know it'll be just perfect as-is. GREAT recipe. Oh, I did use Granny Smith apples and those work beautifully.

Chocolate Orange Truffles

Instead of semi-sweet chocolate, I used bittersweet, which is definitely my preference with orange flavor! I used Triple-Sec for the liqueur and they came out great. The did get very, very soft after being out for a while, but that's ok. No use taking a bite, you just have to pop the whole thing! I used a small cookie scoop to make slightly bigger truffles than the recipe called for, but I still got 16 truffles. They were a hit.

Apple Cake V

Fabulous, with a few changes!!! I added about a tablespoon of cinnamon. What's an apple cake without cinnamon? I also omitted the nuts and cut the glaze ingredients in half. It was PLENTY. This smells incredible while baking. And my girlfriends raved about it. Two of my friends wanted the recipe, so I printed it for them. I forgot to tell one of them the changes I made and she made it just as the recipe calls for. She said, "I'm confused. Mine didn't turn out as good as yours..." So, there ya go. :) Be sure not to miss your workout after this one, tho! Or have a small piece. Wonderful!

Spaghetti Salad I

This salad is so delicious. The longer it sits in the frige, the better it gets! Leftovers are awesome! It has a bit of a bite to it, too. VERY good. This is the only spaghetti salad I'll ever make.

Chocolate Eclair Dessert

This was absolutely fantastic. It's even better because it can be put together so easily! It was really neat-looking, too, with all the layers. I took it to a church luncheon and it was all gobbled up. I'm not sure how to serve it, though. Do you cut it into squares and try to serve it that way? I brought my serving spoon to have people scoop it out. It didn't look very neat that way, but it was still good! I did take the advice of another reviewer and nuked the chocolate frosting so I could basically pour it on. That was very helpful. Very, very good!!!

Mandarin Almond Salad

Restaurant-Style Coleslaw I

THis was an EXCELLENT recipe with one huge change: I would DOUBLE the package of coleslaw mix (cabbage). It had a great taste, but there was just WAY too much dressing. You could easily half the recipe for the dressing or double the amount of coleslaw mix. Very good, though.

Awesome and Easy Creamy Corn Casserole

This was excellent. I made it for Thanksgiving and got a lot of compliments. As another reviewer mentioned, I could not find the 8.5 ounce-size of muffin mix. I bought the 6.5 ounce size of Betty Crocker Corn muffin and bread mix. I doubled this recipe and used 3 packages of the 6.5 ounce muffin mix. I also added 1/4 cup of sugar to the doubled recipe. It turned out great. However, next time I double this, I may try to add just two of the 6.5 ounce size muffin mixes because I'd like to see if it would be a bit runnier, since the title makes it seem like it's a creamy casserole. Mine turned out more like the other reviewers said, like a very moist cornbread. It was delicious nevertheless!! FIVE STARS!!!
