Hash Brown Casserole II

Delicious with changes made from other reviewers. Probably very good without changes but....the package of hash browns I had was only 1 lb 10 oz; I used cream of mushroom; I cooked the onions in butter before adding to mixture; no cornflakes on hand so I baked for 30 minutes, then added french fried onions and a light layer of cheese for the last 10 minutes. GREAT. could have had more hash browns but not to saucy as it was. DH and 5 kids gave it a thumbs up, and I have only about 3 helpings left from a whole dish. Thanks for the recipe!

Eggnog Pound Cake

This was very good fresh. Next day it was dry but still good if heated. I did not make the custard but a glaze with confectioners sugar, eggnog and nutmeg.

Dill Cucumber Dip

Delicious, easy, light but tasty...and different. Have now served this several times and it always disappears; I add extra dill because I love the flavor; serve with bagel crisps or any cracker

Brooklyn Girl's Penne Arrabiata

Great recipe, not too difficult at all...definitely too spicy for my family...go easy on the red pepper if you are not sure. My husband and kids all ate it, even though it did earn a new name - "tubes of fire." Will make again using MUCH less red pepper.

Whiskey Sour Balls

Good - something a little different from our usual. They did not freeze well for me, but that is probably my fault. Everyone who tried one said they were great, but no one ate more than a couple. I had lots of leftovers that had to be trashed after a big Christmas party followed by my unsuccessful freezing attempt.

To Die For Blueberry Muffins

Terrific muffins...seemed like I had too much crmb mixture for the number of muffins. I followed the directions and filled the cups nearly to the top, against my better judgement. Of course, they bubbled over a lot and made a mess in my oven. They weren't pretty to look at, but they tasted great and went fast. and just so you know...they mean for you to make regular size muffins with this recipe (as not a jumbo size muffin tin).

Bacon Cheeseburger Upside Down Pizza

Good basic recipe, although I will change some things next time. There was less than 1/4 pan left from my family of 4--2 year old, preteen, husband and myself. I did a couple of changes--I made my own pizza sauce b/c I did not have any ready made--used 16 oz tomato sauce, 6 oz tomato paste, 1 tablespoon of minced garlic (in the refrig.jar), 1 tbsp oregano, 1 tsp of paprika, and about 1/2 tbsp of basil. I used 1/2 cup each of bell pepper and onions (the kind you buy precut and frozen). I wanted to use crescent roll for crust, but I did not have any, so I used the original recipe "crust". I had some leftover mushrooms, so I added that. I also used 1&1/2 cups shredded "fiesta" cheese. Finally, added salt and pepper to taste--did not measure but it seemed like a lot. Everything else I left the same. It turned out good, but not quite something we would have again. For starters, the crust is really more like a quiche than a pizza crust. I still did not get much of a cheese flavor in it, and the bacon just did not seem to fit. Next time, I will eliminate the bacon, use more cheese (at least a little bit mozarella if I have any), add some pepperoni, and I will try the crescent roll crust. The overall flavor was great, so hopefully these changes will make it perfect. Yes, I realize it is not quite the same recipe anymore--but isn't that the fun of it!?!

Oatmeal Raisin Cookies I

Great oatmeal cookie--I followed the recipe except I soaked and blotted the raisins, and used 1 teaspoon of cinnamon and 1/2 teaspoon of nutmeg. They turned out well. Mine are thin, but still tasty. When I looked at them after 8 minutes, I thought they looked way to wet to be done...I kept cooking until they appeared to be done. Well...they are quite crisp after a couple of minutes out of the oven. Subsequent trays were removed more promptly, and are not nearly as thin and crispy. Next time I make them I will try some of the suggestions for making them a little "puffier"...but the extra cinnamon and nutmeg make the flavor perfect. Thanks for a good recipe!

Brie Cheese Appetizer

This is a delightful way to serve brie cheese. I have prepared it many times, and even the skeptics enjoy it. Easy to make, sounds fancy....I never have left overs. Wheat Thins seem to be the best to eat with this from all the times I have served this.

Portabella Nirvana

I made these for a special New Year's Eve dinner, and they were a hit! They were easy to make and turned out delicious. I did not marinate them in dressing, and I did not use an "Italian blend" cheese. I skipped the marinade altogether and just used the shredded chees I had (cheddar, monterey jack, and asadero). Everyone raved about how elegant they looked, and how great they tasted. Even the kids ate them and asked for more....Thanks!

Easiest BBQ Pork Chops

My family did not care for the flavor of these chops very much. I have had better results using only chops and adding a bottle of barbecue sauce to the slow cooker. A decent recipe, but we won't make again.

Cheater Pancake Syrup

This was fast, easy, and delicious--really handy when I reached in the cabinet for syrup and came out empty. It is very sweet, and I would not want this EVERY time we need syrup, but definitely a welcome change. I used 1/2 teaspoon of pure vanilla extract, and 1/2 teaspoon of imitation maple flavoring, and we all thought it was great. Thanks!

Broccoli, Rice, Cheese, and Chicken Casserole

This was a good comfort food type of casserole. I used left over chicken but otherwise followed the recipe exactly...it was somewhat soupy after 30 minutes, but firmed up a little after 10 more minutes. After sitting for a few more minutes, it was the consistency you would expect. I did not think there would be enough cheese in it, but the flavor was really good. Most of my family ate it and enjoyed it--but my 2 year old kept asking if he could have plain broccoli instead. Overall, a good recipe, but not outstanding.

Extreme Banana Nut Bread 'EBNB'

Terrific banana bread. Wonderful taste and texture. I made 2 batches, one with walnuts and one without. Both were great. The only problem I had was that they all stuck to the pan pretty badly. I don't know what I could have done differently--I sprayed the pans, etc. Will definitely try again.
