Apple Butter III

This is a truly outstanding recipe. Both my MIL and FIL are diabetics. I did not use quite all the juice, but otherwise it is thee most perfect apple butter I've ever made! Just the right amount of "spices"! Thank you for sharing this recipe. I will be making this for years to come!!

Chuck Roast with Homemade Noodles

This was absolutely wonderful. I did add a little bit of steak seasoning to the roast just before searing it. Poured in 1/4 cup red wine and 1/4 cup water, placed in oven at 325 for 2 hours, then added 4 large cut carrots and 6 medium potatoes, quartered and baked for 45 minutes longer. Mmmm mmmm mmmm Had to add a little salt at the table but it was mouthwatering and super tender. Thanks for sharing.

Keema (Indian-Style Ground Meat)

This is totally a 5+ dish. Both for taste and easy of preparation. I only had one pound ground lamb and tofu spaghetti noodles and it turned out absolutely wonderful. DH added just a few drops of hot sauce to his but otherwise made it exactly as written. Thanks for another wonderful meal. I will be making this over and over.

Cabbage Rolls II

Very good. DH is giving it the 5 stars, I would have to go with 4. Just seemed to be missing "something"....just not quite sure what. Overall a very easy dish to make. I took in some of the leftovers to work and a coworker gave it a 5 also....hence the 5 stars after all. :()

Garlic Parmesan Monkey Bread

Excellent, excellent, excellent!!! Served with aged. slow roasted prime rib, ceasar salad with homemade dressing, and brussel sprouts braised in heavy cream and nutmeg. Between 6 adults there was only 1 small piece left.

Gypsy Soup

DH said to give this 6 stars! He absolutely loved it. Did not change a thing except that I added a couple of andouille sausages to it to make a complete meal for him. He did add some more hot sauce in his individual serving but is very pleased with this soup. Said the garbanzo beans make this as far as the "texture". Thank you for sharing. This is also quick and easy.

Islander Artichoke and Spinach Dip

Threw everything in my food processor and, BAM, I was done. Put a little bit of garlic powder in, just because. It is absolutly delicious. Didn't have any parmesan cheese but it is great without it. Put it all into the hawaiian bread bowl and served with ruffle potato chips also. Thanks for sharing.

Awesome Slow Cooker Pot Roast

I made this recipe this past summer when my inlaws were visiting. I, myself, am not a big red meat eater, but I do have to say that this is absolutely the easiest and delicious recipe for roast that I have come across. Even my inlaws were going back for 2nds. DH usually loves anything as long as it is connected to food...LOL! Thanks for another great recipe.

Easy Chicken Fajita Soup

DH absolutely loved this. I did add the whole box of chicken stock also (48oz) to make it more brothy and added 2 of the fajita seasoning mixes. DH likes spicy, so also added one small jalapeno. Thanks for a terrific and super easy meal. I did not saute anything. Just put everything in the stock pot and let it simmer away. Chicken breast chunks were super tender and moist. This is phase one worthy of south beach diet also. yum!

Kalbi (Korean BBQ Short Ribs)

I had never seen or heard of this kind of ribs so couldn't wait to get them and fix them. DH couldn't stop oohing and aaghing over them. Only complaint he had "wasn't any leftovers"....LOL! So next time I will have to double the recipe. Thank you for sharing a wonderful recipe.

Garlic Croutons

Totally awesome. All I had on hand was some white "day old" buttermilk bread. I followed everyone else's lead as far as I used 1 T. butter and 3 T. olive oil, garlic salt and italian seasoning to taste in the warmed butter/olive oil then quickly sauteed cubes. At the very end, I sprinkled on fresh parmesan cheese. They are in the oven now and OMG do they smell heavenly. DH came out and stole a couple already...:) Thanks for a grrreat recipe.

Layered Chicken and Black Bean Enchilada Casserole

DH says this was excellent. I don't eat things like this but loved the ease of preparation (I actually did it just like the video suggested). It smelled wonderful as it cooked in the microwave. Make sure to give it the full 10 minutes to set up after taking it out of the microwave. Thanks for a super easy, fast weeknight dinner.
