Boilermaker Tailgate Chili

This is the best chili recipe ever! My family LOVES it and my kids ask for it over and over! I do modify it a little. I use 1 lbs lean ground beef and 1 lb lean ground turkey sausage to reduce the fat. I also blend the tomatoes as my kids don't like chunky tomatoes. I use chicken stock in place of the beer. And I just leave out the chili peppers as it is already plenty "HOT" for our liking without them. Very little modification but very, very tasty! Don't be afraid to give it a try! I always make it in the crockpot and let is simmer all day. It's always better that way and even better the next day! Makes a very large pot . . plenty of leftovers!!

Classic Cherries Jubilee

My first attempt at cherries jubilee. I used 2 cans of canned cherries and doubled the recipe on everything else. Instead of water, I used juice from the canned cherries. I also didn't have cherry extract so used almond as suggested by others. I will definitely get some cherry extract for next time as I thought the almond flavoring was too much. Also, I will omit the orange zest next time as I thought the orange flavor was too strong. These flavors overpowered the cherry flavor too much. I will certainly try it again with these few changes. P.S. Canned cherries do not need to simmer for the full 10 minutes as they are already semi-cooked in the can. If you simmer too long, the sauce gets too thick and you have to thin it down with more liquid. I think 5 minutes would have been plenty long.

Carrot Cake III

This was my first attempt at carrot cake. I no longer need to search for the perfect recipe because this is it!! If you like dense, moist cake, this is the recipe for you. I only made some very minor changes after reading other reviews. I used 1 cup white sugar and 1 cup brown sugar as suggested and I added an extra 1/2 tsp cinnamon and 1/4 tsp nutmeg. I also only used 1/2 cup oil and 3/4 cup applesauce. I really think this is what helped make it so moist and yummy (and less calories and fat!!). I made it the night before and frosted it and covered it and stored it in the fridge till the next evening. Pulled it out an hour before serving and it was FABULOUS!! Rave reviews from all . . .even my picky kids! Will definitely make this one again!
