Bavarian Sauerkraut

I don't care for how most sauerkraut dishes, but this is how I remember enjoying sauerkraut in Germany. It is delicious! My only suggestion is to always rinse sauerkraut using warm water and drain well. I've also made this recipe using white wine and beef broth instead of sherry and chicken stock. I like to serve this with any pork or sausage and red skin boiled potatoes.

Good Old Fashioned Pancakes

Very fluffy pancakes. I reduced the amount of salt and used unsalted butter. I also combined the egg, milk, butter and a tsp. of vanilla separately, then added to the sifted dry ingredients. There weren't any leftovers.

Unbelievable Chicken

I've made this twice now and my husband has declared this to be our go to chicken marinade from now on. The first time I made it with chicken breast halves. I was afraid I might have grilled it too long trying to get the thickest part of the breasts cooked through. It still came out moist and delicious. The second time I used it one chicken thighs and it grilled quicker and again was moist and flavorful. Fresh lime/lemon juice is the key. Excellent simple marinade.

Bow Ties with Sausage, Tomatoes and Cream

I've made this twice already and it's fabulous! Husband can't eat it without commenting how good it is. I used the bulk Sweet Italian sausage to save time and it really comes together fast. Yummy!

Fiesta Chicken and Black Bean Enchiladas-dup

Delicious! I used two chicken breasts and whole can of enchilada sauce. Only problem was it made enough for 2 pans. Luckily, I had enough tortillas so I cooked and froze the extra. Enjoyed it both times!

Omelet in a Mug

Even though I'm off from work today, I didn't want to dirty up the kitchen. This was quick and yummy. I added milk but I read that water works better. No mess and it could easily go in a tortilla or english muffin. I think next time, I'll limit cook time to 2 min. The mug keeps it super hot and I think it kept cooking the omelet.
