Lemon Stuffed Chicken

I make chicken this way all the time and love it. I don't add the stuffing. I use one whole lemon which I cut slits in but keep it whole. I add fresh rosemary and thyme springs from garden and stuff the bird. I rub skin with olive oil, pepper and paprika. I cook at a temperature of 400 degrees for one hour, uncovered. My family loves it!

Easy Chicken Enchiladas

This was really good and so easy to make. After reading the reviews, I made the following changes. 1. used 4 oz of low fat cream cheese. 2. used 1/2 jar salsa in the heated mixture and reserved 1/2 for the bottom of casserole dish and to top the enchilada's off (to avoid them drying out or hardening). 3. added cooked corn from 1 ear. 4. added canned chili peppers. 5. added cilantro. 6. used Costco rotisserie chicken. 7. Trader Joe's lite mexican blend cheese. The only thing I would do differently next time is to add some heat with jalapeƱo's.

Fish Fillets Italiano

My husband and I both enjoyed this dish. I didn't have the black olives. I used 1/2 cup fresh parsley and used a garlic press to get the most flavor out of the garlic. I added fresh ground pepper. I served it over short grain brown rice.

Turkey and Quinoa Meatloaf

After reading other reviews, I made the following adjustments. I omitted the worcestershire sauce and used LS Soysauce (only 1 Tbsp). I reduced the hot pepper sauce to 1/2tsp, omitted the salt, reduced black pepper to 1/2tsp, used egg substitute in place of egg, used cooking spray instead of oil, omitted the brown sugar. The additions I made were to add panko bread crumbs, dried oregano, dried basil and homemade tomato sauce on the top. I used a loaf pan which I'd highly recommend to keep its shape. I love the flavor of the a quinoa. This was excellent. My husband loved it. I will make this again.
