Scrumptious Spring Soup
I had just been given some fava beans and was searching for a recipe to use them when this one popped up. It sounded very interesting and I had everything on hand except for the fresh thyme. I halved the recipe, made it as is and it has a lot of interesting flavors going on and is a very filling soup. My personal preferences: I found the beef broth too heavy for all the spring veggies. When I make it again, I will try it with chicken or veggie stock and switch out the veal for ground chicken. Definitely worth trying!

Belgian Waffles
This was my first attempt at Belgian Waffles and the recipe looked pretty simple in case I wasn't very awake in the morning. :) I made them as directed and they were a hit.

Sunrise Pizza
Excellent change for a weekend breakfast. Very filling. I make my own pizza crusts so I pre baked a small one to use for this and it worked fine. I was out of sausage so I cooked bacon and crumbled it in the eggs as they cooked and added mushrooms and olives to the toppings. I don't normally eat eggs but this had enough other things to 'cover' the taste of the eggs and I really enjoyed it. I do think it would be much better with a hot sausage and will try it that way another weekend. Combine with a Mimosa and it made for a very special morning. :)
