Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I loved the texture of these muffins but 1 Tbsp of cinnamon is WAY too much. Next time I'll half the amount and then I'm sure they'll be perfect. I didn't have strawberries so I used frozen blueberries.

Cornflake Waffles with Honey Sauce

These were not good. They deflated really quickly once they were off the grill which made them not so attractive and I found the cornflakes to be chewy. Chewy is not what I want in a waffle.

Coconut Ice Cream

Slow Cooker Oatmeal

I think that the wide variety of results on this recipe can be chalked up to crock-pot differences. To avoid a cooked on mess, your crock-pot needs to be 2/3-3/4 full when you turn it on. The recipe as written would fail miserably in a 6 qt cooker. Also, due to the long cooking time, use 20-25% more liquid than the oat container calls for. I wouldn't use instant oatmeal here. Try Old-Fashioned or Steel-Cut oats. I have a 6 qt crock pot and I used: 2 cups old-fashioned oats 1 cup steel cut oats 8 cups water 3 cups milk 4 Tbsp butter 1/2 cup brown sugar (should have used more) I cooked on low for 8 hours and stirred. The result was creamy and delicious and there was just a little stuck in the corners. This made a lot, but for the rest of the week I'll just portion it out and add a little milk before re-heating.

Strawberry-Sauced Crunchy Fruit Salad

I have to say, that this isn't the most attractive dish. I mixed the sauce into the fruit to keep the apples from browning and it made it look pretty messy. It tasted better than it looked though and the topping was yummy. :) I'll make the topping again for other salads.

Smoky Chipotle Hummus

This hummus was delicious. Very flavorful with a hint of spicy - not overwhelming. I used the ingredients as listed - except no tahini as my store does not sell it. The only change I made to prep was a tip I read on another hummus recipe to make a creamier mixture: Drain the garbanzo beans and pour them into a bowl of water. With fingers, gently rub the beans to loosen the hull. Hulls will float to the top and you can easily scoop them out. When you've removed them all, drain off the water and use the beans as directed.

Tres Leches (Milk Cake)

While i was making this cake, it seemed all wrong. Pouring the milk over the top was so counter-intuitive that i was sure it was going to be gross. WRONG! This was really delicious and I really enjoyed it. It wasn't like anything I had had before, but very delicious. I followed the directions as written, but used Cool Whip because it travels better than whipped cream and I was going to a potluck!

Chantal's New York Cheesecake

Reading the reviews, I noted that most of the complaints were about lack of flavor so I added the zest of 1 lemon and 1/4 teaspoon lemon extract. The flavor and texture were wonderful. I made this using the suggested tips of having my ingredients at room temp and putting the pan in a water bath. At 50 minutes, I ran a knife around the edge of the pan and closed the oven. At 60 minutes I turned off the oven and left the cheesecake in for 3 hours. When I checked on it, it was gorgeous! I left it on the counter for another hour before refrigerating. No cracks. Will make this again and again.

I'm a fan of casseroles and one-dish meals, and I like all of the ingredients in this dish. Somehow though, combined together I found this to be gloppy and of mediocre flavor. I won't be making it again. I'm tempted to go with 2 stars here, but since we did all eat it, I'll give it three.

Cheese Vegetable Soup I

Without the celery and carrots, this was a very kid friendly recipe. I ended up needing 4 cups of liquid to start - maybe I put in too many potatoes. I put the jar of hot sauce on the table for people to add if they wanted more.

Slow Cooker Italian Beef for Sandwiches

Just sliced, this would have been too dry. However, shredded and served on buns with the dipping sauce, it was delicious. I made it as directed and found the seasoning to be just right.
