Banana Banana Bread

My all time favorite Banana Bread recipe!! (and I've tried many) I love nuts, so I add approximately 1/2 cup walnuts (inside the batter, and on top of the loaf). I also add decrease the sugar to 1/2 cup. Very yummy!! Enjoy!

Apple Pie Muffins

Followed the recipe as written. I was a bit concerned when I saw how thick the batter was before spooning it into the muffin tins, but they turned out great!!! (very light, spongy, and not overly sweet) I doubled the recipe and made 12 large muffins and 24 minis. The mini muffins took 16-18 minutes to cook. Enjoy!

Greek Style Potatoes

Boiled the potatoes first to cut down cooking time. Used chicken stock instead of bouillon cubes/water and broiled until they were slightly crispy/crumbly. Turned out great!

Banana Muffins II

Delicious and kid-friendly. Made these with my 3-year old. Cut back the sugar to 1/2 cup and added some chocolate chips. Used up the bananas left in my freezer so used 5 medium ones. Made 12 perfectly sized muffins. Everyone at preschool enjoyed them.

Savory Pork Roast

Simple, but delicious. Had to cook an extra 20 minutes to get the pork to a high enough internal temp. Followed the advice of others and drizzled the roast with olive oil to help the rub stick. Added some ground pepper to the spice mix, as well. Cooked the roast with medium sized chunks of potatoes (tossed with olive oil and sea salt). The roast and the potatoes were done at the same time and both had fabulous flavors.

Cocoa Oatmeal Cookies

Quick, easy and tasty child-friendly recipe. Easy to follow with minimal mess/cleanup. Only modifications I made was to substitute the raisins for semi-sweet chocolate chips and to add an upside-down bittersweet chocolate hershey's kiss to the centre. (The chocolate in the centre was esthetically pleasing and added a nice surprise when you bit into them). I made the cookies slightly larger and increased the cooking time slightly to 13 minutes. Ended up nicely moist in the centre with a slight crunch to the outside. Found them a bit sweet (even the bites without chocolate), so next time I would cut back the sugar. All around a yummy cookie.
