Do I Have To Go To Pastry School?

Just about everything I know about cakes, I have learned from the internet, from engaging TV shows,from books written by those who have blazed the trails ahead of me,and from hits and misses in my own baking efforts. Today, I am simply referring to one example of educating myself  in the art of baking cakes from scratch.

You know, there was a time that I only used mixes to make my cakes with, fearing the boogy man that kept telling me there was no way that I could actually bake my own successfully. When I would read recipes from so many talented,award winning bakers, the thought of me baking a cake from scratch gave me brain freeze!

I began to notice,though,that when making wedding cakes and attempting to sculpt a cake, a box mix just didn't hold up to the "sturdy" standard as well. One day, I decided to "cross that line" and face my fears. Now that I have discovered that I can bake a tasty home made concoction, it is the only way for me to go!

So, among other things that I never imagined I could ever possibly do, I make my own flowers (there are many that I am still working towards mastering) such as roses,tulips,daisies,pansies,sweet peas,lilies and orchids. I use fondant and create critters and people. Painting on cakes is something I love to do. There are so many things that I can do creatively, such as painting,drawing,sculpting that I have now applied to my cake decorating. I love it, I love it all!

Wow. Holy krapola there Cj, those things are absolutely awesome. You make them TV bums look like, well bums. I make lots of cakes from scratch, lots from boxes too, but damned if I can get myself into decorating although I can fully understand the draw. Those are beautiful! How the heck did you make the boots?

Wow, amazing! I've been decorating birthday cakes for my boys for the last 5 years or so. Had no clue what I was doing when I started this, and I still swear that I really don't know what I'm doing. But it's a learning experience each time. And each time I suggest that I just go order them a cake, the answer is always an emphatic NO!

beautiful work CJ. And in answer to your question, I would say NO, you do not need to attend a school. If you are self taught, and this talented, you need to be using your talents and let them make you some money. Practice definitely makes perfect and the more you do it, the better you will get. Obviously, you have a goal and a desire, which is more than 1/2 the battle.

AS a culinary student myself, I say "NO, you do NOT have to go to pastry school." You've clearly got talent and I'd say based on your photos that practice practice practice would get you further along than school would at this point. The only consideration would be if you feel that a certificate or diploma from a culinary school would boost business for you. But you're clearly light years beyond most beginning students.

Thanks so much! I had considered at some point attending a culinary pastry school to learn the tech stuff,which always helps,but everything that I have learned has been from my trying and trying again,watching videos that I have purchased,videos online,tv shows,and when I am asked to do a cake design that I am not sure of,I always say yes unless I really,really don't think I can do it. I can't help it,I love a challenge! Um,my purpose with the blog title,was to actually ask if anyone really thinks that they need to attend school. It takes longer sometimes to learn things on your own,but just as rewarding,if not more so. My point actually was,that I don't have to go to school to do what I do. Thank you all for your compliments and points of view!
