Wacky Buckwheat Spice Cake

Rhubarb Crunch

I made this in an 8x8 baking dish, mostly using the amounts in the original recipe, with the exception that I halved the butter. It was delicious served with whipped cream. I will definitely make this again.

Chocolate Chip Orange Zucchini Bread

Best zucchini bread I ever tasted! For some reason though, it stuck to my loaf pan and wouldn't come out in one piece. Next time I will try some parchment paper. And there will definitely be a next time. I threw out my previous zucchini bread recipe, and am keeping this one!

Peanut Butter Balls IV

I made these last night, and they are truly delicious. I read many of the reviews, so I was prepared to make one adjustment to the recipe as written: I used 3 cups of confectioners sugar instead of 4. The mixture held together perfectly, it was not crumbly at all. My suggestions have more to do with procedure. I wore vinyl gloves and combined everything by hand to get a smooth texture. Next time I would sift the sugar, because it was forming small lumps that took a lot of time to press out. I don't know if others used an electric mixer, but the recipe didn't specify that so I didn't use it. The maple extract was not available in stores, so I ordered it online, through Amazon. It was actually 'imitation maple extract', because true maple extract is nonexistent as far as I could tell! You can taste it in a subtle way, so it was worth the extra effort to get it. However, I think that this recipe would be successful even without it.

Working Mom's Hamentashen

Hamentashen have to be triangular, which is their distinguishing feature. Otherwise, it's just a cookie. Just sayin'.

Rolled Buttercream Fondant

This was my first attempt at making and using fondant. I followed all the advice I gleaned from looking at various recipes, and it was easy enough to make, but it didn't make it onto the cake in one piece! Maybe the cake was too big, almost 9x13. If you are an inexperienced cake decorator like me, only attempt this if you are planning to cover something small.
