Applesauce Bars

Reviewed: Nov. 26, 2011
These are so amazing! It's super moist with delicious fall flavor. If you're debating on the icing, do it! It totally makes it. I usually add a little extra cinnamon, for preference. I have other family members making this all the time now.

Pumpkin Bread IV

Reviewed: Nov. 26, 2011
I've tried other pumpkin bread recipes on allrecipes and this one is the best. Like other reviewers I use one large can, which adds a bit extra pumpkin, so I reduce the oil just a little, maybe 1/8 cup and I add an extra 1/2 tsp of cinnamon, just because I like it. You can definitely taste the clove flavor. I think it's nice, but if you don't care for cloves, you might want to reduce it. It makes excellent muffins also. What I offen do is make one loaf with mini chocolate chips (my fav), one loaf with chopped walnuts on top, and a dozen muffins, and I bake them all at once. Keep an eye on it. Mine sometimes gets done a little early and starts to get too brown on the edge so I reduce the heat part-way through to about 325. I took this to Thanksgiving this year and my husbands grandmother said it was the best bread she'd ever had.

The Best Rolled Sugar Cookies

Reviewed: Nov. 3, 2011
I made this recipe as written and I thought it was great, however I feel like 400 degrees is too hot to bake the cookies. I usually do 350 but I tried 400 since that's what was written and sure enough, they burnt on the bottom really quickly. I tried 375, but that still seemed a little too hot. 350 was best in my oven. But, besides that, don't change anything, delicious and great for a nice, flat cookie to decorate, which is the fun part. :)

Baked Kale Chips

Reviewed: Mar. 19, 2011
I'm really into "super foods" but I have two very picky young eaters at home, so I was anxious to try this one. I tried three different flavors in one batch to see which was best. I used soy sauce on some, salt on some, and parmesan and salt on the rest. I took them out at exactly 10 minutes and not a minute too soon. The soy kale was the only one not slightly overcooked. The parm kale was the most overcooked. They were all tasty (and I'm not much a green things eater), but my fav was the parm. I thought the soy was a little strong tasting, but I could have just used too much. As for the picky eaters verdict: my four year old liked it, my one year old wouldn't touch it simply because it was green. We'll try her again later. :) Big thumbs up!! My advice is to practice with this one a little to get the flavor you like and the cooking time just right.

Super Easy Chicken Noodle Soup

Reviewed: Feb. 4, 2011
Delish! I used half chicken stock and half water. That made 4 cubes plenty. I also season the chicken with a little parsley and thyme and add frozen carrots and sometimes peas for some veggies and I do probably add a little extra noodles. Also, don't bother cutting up the chicken with a knife, it shredds nicely with a couple forks. I had no idea how simple homemade soup could be. This is now a winter regular at our house.

Pumpkin Wheat Honey Muffins

Reviewed: Nov. 6, 2010
I took everyone's advice and added extra pumpkin and pumpkin pie spice. And I omitted the nuts because I don't like them and added a little more raisins. They were delicious and I had everything on hand! My 4 year old helped me make them and she loved them! The texture is a little different than other muffins, so I thought they weren't getting done at first but then I stuck a knife in one and it came out clean. That's when I realized they were just denser than I thought they would be, not fluffy really. But I don't mind that. I feel a lot better serving it to my kids than most muffins! I'd bet they would be really good with chocolate chips.
