Oven Fries II

Reviewed: Dec. 15, 2010
I'll be making this again! Turned out great. Made one batch at 45 minutes at 425 and then another batch for 45 minutes at 350. Preferred the latter; turned out less crunchy, but both were delicious. Forgot about the paprika, but added garlic powder and parmesan cheese. Yum.

Banana Blast II

I made completely as is and yum!!! Tasty!!!! It was the perfect amount of brown sugar in combination with the banana. Didn't feel like it needed anything else.

Bananas Foster Chimichangas

Reviewed: Apr. 16, 2011
Very awesome recipe. We had bananas to use up so I searched for a recipe and decided to make this for breakfast! Delicious. Thanks to another reviewer, I put in one tsp of vanilla in place of the spiced rum. I ate mine on a tortilla (unfried), but my husband made his on a piece of wheat bread with peanut butter and strawberry jelly and is already requesting seconds.

Smothered Tilapia

Reviewed: Oct. 11, 2010
I loved this! Instead of swiss cheese, I used 2oz of cheddar per piece of tilapia. It was delicious! The only thing I would add is a bit of broil at the end of baking to crisp it up.

Healthy Turkey Loaf

Reviewed: Oct. 13, 2010
I was so glad to come across this recipe. My husband doesn't like beef but I love meatloaf, so this was a great compromise. It was delicious. I used 1.25 lbs of turkey to make one loaf (not sure how a loaf could be used with 1/2 lb) and it made 5 hearty servings. I cooked at 350 for 55 minutes when the turkey reached nearly 180 degrees. I doubled the bread crumbs and added another egg, and served with ketchup and corn on the side. Delicious! Will definitely make again.

Whole Grain Healthy Banana Bread

Reviewed: Oct. 16, 2010
The only substitutions I made were that I used organic cane sugar instead of Splenda, used all white flour instead of wheat simply because that's what we had, and used unsweetened almond milk in place of skim milk. Baked at for just over an hour, pulling it out about 7 minutes early because the top was browning. Very moist and delicious. My husband loved it too.

SO FABULOUS! I didn't even have the fresh parsley, but this tastes straight out of a delicious restaurant! LOVE IT! Thanks so much for the recipe. Can't wait to try it again with parsley.

Creamy Dill Dipping Sauce

Reviewed: Feb. 1, 2011
GREAT stuff! Used dried dill weed b/c that's all I had on hand. Husband and I loved it, and made another batch the next day! Wouldn't change a thing!

Strawberry-Banana Smoothie

Reviewed: Feb. 1, 2011
I'll be making this one again! Made just one serving of this in my rocket blender. Was excited to see a recipe utilizing the milk I drink everyday: Silk Almond Original. The only thing I substituted was agave nectar for honey. I also used a frozen banana, not a fresh one. Not sure if that made the consistancy thicker than normal, but I did have to start eating this with a spoon until it melted a bit. I'll try a fresh one next time. Thanks for the recipe!

Cheesy Buffalo Chicken Dip

Reviewed: Oct. 18, 2010
I made a healthy version of this recipe and it turned out great. I couldn't stop eating it! =) I made the following changes: used 1 package of MorningStar Farms Chick'n Strips in place of the breast halves. I used no celery, and used fat-free cream cheese and fat-free cheddar cheese. I also used reduced fat ranch dressing (but regular blue cheese). All the same measurements that it called for. Would recommend serving with baked tostitos!

Tangy Red Cabbage

Reviewed: Apr. 30, 2011
I don't like cabbage, but I found this recipe to be tasty. I used only half the required amount of soy sauce and balsamic vinegar, as I'm not a big fan of either. I added freshly ground sea salt, and YUM! I shocked myself at how much better cabbage tastes in this mixture! Thanks for the recipe!

Cheese Lover's Tuna Casserole

Reviewed: Oct. 9, 2010
I made the following changes: I put breadcrumbs instead of croutons on top. I broiled it for a minute after baking for 15 minutes. I put it in a 8x8 pan instead of 9x13. My husband and I thought this was good, but I thought it could use some mushrooms, chives, or onions... maybe next time =)

This was good. I doubled the recipe, but felt it could use something more... for more sweetness. Maybe I'll try peanut butter next time.

Baked Tilapia in Garlic and Olive Oil

Good stuff. Marinated from morning instead of overnight. Husband and I equally enjoyed. Added grated parmesan cheese on top. Served with homemade potato fries and a salad.

Slow Cooker Chicken and Dumplings

Reviewed: Nov. 21, 2010
I was disappointed with this, especially after how great it made the house smell. It was bland and the biscuit dumplings were too doughy (added them 1 hour prior to serving). Props for creativity in creating an easy dumpling recipe, but just not as flavorful as I had hoped.

Chicken Breasts in Caper Cream Sauce

Reviewed: Oct. 17, 2010
I was honestly disappointed with this recipe. I had such high expectations because I love capers. Pretty sure the dill week ruined it for me. It also could have been because I didn't make it exactly as written. I didn't have heavy whipping cream on hand, so I combined 3 tbsp unsalted butter with 2 tbsp flour and 6 tbsp unsweetened almond milk (all I had) to make a heavy cream-like mixture. I also used varied this recipe by using much less than a whole tsp of salt. Finally, using my nonstick cookware, I do not cook anything at medium-high heat, so I cooked the chicken longer at medium, which resulted in blackened chicken on the outside. Still learning cooking techniques, but this one was a fail.
