Whole Grain Healthy Banana Bread

The only substitutions I made were that I used organic cane sugar instead of Splenda, used all white flour instead of wheat simply because that's what we had, and used unsweetened almond milk in place of skim milk. Baked at for just over an hour, pulling it out about 7 minutes early because the top was browning. Very moist and delicious. My husband loved it too.

Healthy Turkey Loaf

I was so glad to come across this recipe. My husband doesn't like beef but I love meatloaf, so this was a great compromise. It was delicious. I used 1.25 lbs of turkey to make one loaf (not sure how a loaf could be used with 1/2 lb) and it made 5 hearty servings. I cooked at 350 for 55 minutes when the turkey reached nearly 180 degrees. I doubled the bread crumbs and added another egg, and served with ketchup and corn on the side. Delicious! Will definitely make again.

Smothered Tilapia

I loved this! Instead of swiss cheese, I used 2oz of cheddar per piece of tilapia. It was delicious! The only thing I would add is a bit of broil at the end of baking to crisp it up.

Cheese Lover's Tuna Casserole

I made the following changes: I put breadcrumbs instead of croutons on top. I broiled it for a minute after baking for 15 minutes. I put it in a 8x8 pan instead of 9x13. My husband and I thought this was good, but I thought it could use some mushrooms, chives, or onions... maybe next time =)
