Kentucky Bourbon Balls

These tasted delicious and very alcohollly :-) for the holidays. The only little problem was that I misread the powdered sugar amount to be by weight instead of volume and ended up with a bucket load of the base butter/sugar mix. Maybe it's just me but it would've been nice if the recipe had said "1 cup" instead of 8 oz or whatever it was. Sugar is packaged in weight so both my husband & I made the assumption that the recipe was referring to weight. Oh well. I ended up with a quadruple recipe of the base, 1/2 of which I made the Bourban Balls and the other 1/2 I made my own creation of Creme' de Menthe and chopped dark chocolate-a happy creation!

Cheesy Potatoes I

This was a great base recipe but pay attention to everyone's reviews and tweak it! After reading the reviews, I sliced them pretty thin to quicken cook time and cut out 1/2 of the velveeta in favor of real shredded cheddar cheese. I also cut back a bit on the butter. I went heavy on the milk because so many reviews said dryness was a problem, but I ended up with the opposite prob-too much liquid! About 3/4 way through cooking time and it was still like soup. I poured off quite a bit and that fixed the prob. It took about an hour & 1/2 before it was completely done. It had just the right flavor I was looking for to accompany our ham Christmas dinner though and will definitely make it again, tho I think I'll try it in the crockpot next time!

Bean Soup

great base recipe! I had a ham bone to use, which I'd never done before, but the only beans on hand were red beans & kidney beans. I used red beans and it still turned out delicious. Kinda reminded me of the ol' campbells bean'n bacon soup, texture-wise. Better the 2nd day! Otherwise, kept spices the same and found it plenty salty with just the ham!

Banana Banana Bread

I was so excited to make this since I haven't found a recipe that produces anything other than a dry banana bread. I wish I could rave about it like so many other did but for me, this turned out just o.k. I concede that I may have stirred it a bit too much. The bread was moist on top but dry towards the bottom half. I did add extra spices (ginger & nutmeg) and chopped bitter sweet chocolate (about a cup) to my doubled recipe. I used 5 small bananas. I will give this another shot, adding more bananas and being more conscientious about my mixing!

Apple Bars

Sorry, but this was dry, dry, dry! I used 1/3 more apple than what the recipe called for and still, it turned out more like a coffee cake rather than the moist "bar" I was hoping for.
