Zucchini Egg Bake

I made this recipe for a potluck breakfast at my job today. It was a delicious hit!!! I used some of the suggested ingrediants.I doubled all the ingrediants, and substituted the marjoram with oregano and rosemary spices, and used I Can't Believe It's not Butter instead of butter. I added chopped mushrooms to the zucchini sauteed mixture, and topped it with tomato slices. I also baked at 375 degrees, and added an additional 15-20 mins to the bake time. Like I stated before, it was a hit, especially because the staff including myself are eating more healthful. Next time I will add diced tomatoes. Yum!! this will definately be made again :o)

Oriental Shrimp Noodle Soup

Tonite I needed this soup! I think it was quite tasty. I did substitute the snow peas for edamame. I also used frozen shrimp instead of fresh, and instead of vermicilli I used thin whole wheat pasta (still broke it up into 2 inch pieces). I opted to eliminate the celery, not a big fan of it. This soup was perfect for this chilly winter evening.

Slow Cooker Corn Chowder

I took the advice of some of the other reviews. I left out the water, and ham. I also chose to use less onion. I added fresh chopped carrots, used new potatoes, chicken broth, thyme, marojoram, oregano, 2 % milk instead of evaporated milk, and added cornstartch to thicken (about 2 1/2 tablespoons). For an added kick I also added cayenne pepper. The chowder tastes amazing! I will use it again :o)
