Banana Crumb Muffins

I prepared this recipe for breakfast today because it got so great reviews. My daughter said: "They taste like regular banana muffins with sugar on top. And they do not need the sugar on top. I like them without the sugar. Please serve the regular banana muffins next time." So yes, they are good, but I also prefer them without the sugar on top. We like banana muffins filled with cream cheese and goat cheese.

Easy Mini Quiches

I prepared this recipe for breakfast this morning. We were very pleased. Quiches were delicious. I tried quiches before (in a very fancy restaurant), and I can say the result is up to the standards. I did not have buttermilk mix, so I used 1/2 pancake mix and 1/2 cream instead. The result was fabulous. Great texture and taste.

Rice Balls a la Tim

My husband asked me to review this dish. I prepared this for dinner and he totally loved it! I did not have enough Parmesan cheese, so I used Parmesan cheese plus cheddar cheese. I fried the meatballs in little olive oil instead of baking them, to save time. I also skipped the tomato sauce to serve. They were great! Another plus: you can leave the meatballs in the fridge and finish the recipe when you are going to eat them. I kept them in the fridge for 2 days with no problem.

Strawberry Tiramisu for Two

When I first tried the recipe I was going to post a bad review. I did not like the way the flavors blended. I did not eat the whole recipe. I just had 1/2 and ate the rest the next day. Then it was delicious! I recommend it to prepare the recipe one day and let it rest for 24 hours before consuming it. The flavor is very different. It tastes so much better. You will thank me later...

Mostaccioli with Spinach and Feta

This recipe is absolutely delicious. I did not find tomato basil feta cheese so I used Apetina Danish Feta with Herbs & Spices, and I did not use as much tomato as requested, but it was still great. I served it with Meat Balls a la Tim. My husband was thrilled!

Spinach and Bacon Chicken

I prepare this for lunch today. The recipe is good, but it needs a little work. I read the reviews so I decided to use chicken broth instead of white wine. The result was the sauce was in need of something else. I will add 1 tablespoon of cherry next time. I think the bacon bites do not mix well with the texture of the dish. My husband thinks the same. I will skip it next time. The resulting sauce is too thin. I recommend adding a little more flour to thick it. I had no problem with the presentation. It was beautiful. But I need to work a little bit in the flavor. I think with the extra cherry it will be a winner. My daughter loved it (and she is a though reviewer), except for the bacon bites.

Crepes

I haven't tried this recipe, but I love preparing crepes for breakfast. The recipe I use is slightly different: 1 egg, 1 cup flour, 1 cup milk, 1/4 cup water, 1 pinch salt, 2 tablespoons oil, 1/4 teaspoon vanilla (only for desert crepes). My daughter loves hers filled with cheddar cheese and ham. We like ours filled with banana and covered with whipping cream. My favorite filling is: 2 pealed and sliced apples sauteed in 2 tablespoon butter; when it starts to get brown add 1 teaspoon powdered cinnamon, 1 teaspoon brown sugar, cover and cook slow flame 'till apple is tender (add a little water if needed). Fill the crepes with the apples and cover with whipping cream. Delicious!

Spicy Roasted Red Pepper and Feta Hummus

This is the best hummus I have ever tried. This is the first time I prepare hummus. I tried it before in restaurants, but this one is way better. I always read the reviews, so I added 2 garlic cloves (we love garlic) and 1 tb olive oil, and used home-roasted red bell peppers. We (hubby and I) LOVED it. I will def make it again, and again, and again... And it's pretty easy to make. It only took me about 15 minutes (including roasting the red bell pepper).

Modenese Pork Chops

I prepared this recipe 2 days ago for dinner. It looked so simple I had little faith in it, but I was surprised with the results. It is a simple, easy to make recipe, but the result is great. It is a very tasty way to prepare pork chops. I followed the recipe as it is, the only change I made was adding a little flour to the sauce to thicken it a little bit. Thanks for sharing. My family definitively thank you. The three of us enjoyed our meal!

Orange Pecan French Toast

I think this is the best breakfast I've ever had. This is just delicious. The french toast melts in your mouth. The consistency of it is heavenly. I did modify the recipe a little bit, because I am very intolerant to sugar. I used 1/4 cup brown sugar for the top (no syrup), did not use sugar at all for the orange mixture, and did not use confectioner's sugar for dusting). My husband told me when he had the first try he had an "Anton Ego moment". I stayed happy all morning. This recipe made my day.

Grilled Bacon Jalapeno Wraps

I prepared this a couple of days ago. Concerned about the heat I followed some reviewer's instructions and let the jalapenos rest in cold water for about 15 minutes. Mistake. The jalapenos ended up tasting like regular bell peppers. After grilling did not have heat at all! Using just cream cheese is also pretty lame. It is just too simple for a filling, so I would recommend following some instructions to add a little more flavor to the filling. I will try this again without trying to remove the heat from the jalapenos, and adding something "extra" to the filling.
