Banana Banana Bread

FANTASTIC! This is my go-to banana bread recipe from now on. I did need to bake it a bit longer, but it was just the right texture and moistness inside, with the perfect crust. We let it cool on the deck in below-zero temperatures ... couldn't wait to eat it!

White Chocolate Macadamia Cranberry Dreams

Fantastic! I didn't change a thing. I did half the recipe since I only had 1-1/2 cups of flour, and then I heated up plain white chocolate chips in the microwave and drizzle them over the cookies after they came out of the oven. I brought them to work for Valentine's Day and I got rave reviews; one coworker also asked for the recipe!

Spinach and Rice Alfredo

This was amazing! I had a ton of cooked white rice and some fresh spinach I needed to use up, as well as an opened carton of whipping cream that was getting old, and this was the perfect solution! It tasted kinda like a different version of macaroni and cheese. Quick, easy, and great for reheating at work on my lunch break. The only thing I did differently is I added 1/4 of a leftover onion and sauteed it with a teaspoon of minced garlic from a jar, and used cracked black pepper.

Best Black Beans

This was great! I love black beans, and this was a fantastic way to prepare them. I modified the recipe slightly: instead of using the juice from the can, I drained it and used water instead. I also added one chopped tomatillo, a tablespoon of butter, and a 1/4 tsp of cumin. I used it as a filling in tortillas with lime juice, salsa, and a little cheese. Definitely making this again.

Irish Cream Sugar Cookies

I followed the suggestion of other reviewers and used more irish cream. These turned out great! I brought them to a cookie exchange and had a coworker ask for the recipe! My roommate and husband raved about them for days.

Balsamic Bruschetta

I made these as finger snacks on a night when a group of us were getting together for Friskies (gin and Fresca) at our apartment. I used a can of diced tomatoes, about a tablespoon or so of dried basil (my supermarket didn't have any fresh basil this time of year), a spoonful of minced garlic from the jar, and regular salt. I sliced the bread pretty thick (like Texas toast sized slices), coated each with olive oil cooking spray, and toasted them at 350 in the oven for about 7 minutes. I then spooned the mixture onto them, since my friends wanted it "warmed up." It was a hit! They devoured about 4 to 5 slices each and asked for more, so I whipped up another batch, but this time instead of putting the cheese in the mixture itself, I left it out and sprinkled it in a mound on top. It was pretty good, but I think fresh tomatoes and fresh basil will make it so much better. Thanks for making me the "best wife ever!" :)

Easy Company Chicken

I used one can of cream of chicken and one can of cream of mushroom, and substituted shredded mozzerella because that's what I had. I was hoping it wouldn't be too spicy, since my husband is not a huge fan of curry, but it turned out deliciously creamy and mild. I also upped the cooking time to 1 hr 20 min, since my chicken was not completely thawed. It tasted great with brown rice!

Southwest White Chicken Chili

This tasted amazing! However, it left a few things to be desired. There was too much chicken in ratio to everything else. There wasn't enough condensed soup (which I'm guessing was supposed to thicken and flavor it) and I had to add more water than called for just to have a soup rather than some liquid in the bottom of the pan. I only used one can of beans but I could definitely have used two cans. I also simmered the soup for about 15 minutes to make sure the chicken was cooked completely through and to mingle the flavors. Definitely a keeper!!

Mouth-Watering Stuffed Mushrooms

Not bad. Just the right amount of "bite" in the cream cheese mix. The only problem I had was I had way too much filling, and I thought I followed the recipe exactly. Might make these again if the occasion presents itself.

Baked Slow Cooker Chicken

This was the most tender, moist, fall-off-the-bone chicken ever! I changed a few things based on other reviews, however: I layered the bottom with quartered potatoes, onions, carrots, and celery, then stuffed the chicken with a coarsely chopped onion and three teaspoons of minced garlic. I poured in a little apple cider since some had expressed concerns about it drying out, but since it's in the slow cooker I wouldn't repeat that step, since it ended up stewing in a mush of veggies and apple-chicken juices. I used a rub of olive oil, paprika, salt, pepper, sage, basil, and parsley. Finally, I used a three-pound chicken and mine was a tad too big for my slow cooker, so I covered it loosely with tin foil and set the lid on top of that. Turned out great! My husband says it's definitely a keeper!

Easy Vegetable Pot Pie

Very good vegetarian meal! I used frozen mixed veggies and thawed them in a pot on the stove before draining them and mixing with a can of cream of potato and the milk. I baked the bottom crust for 5 minutes before adding the filling and I'm really glad I did, it was the perfect consistency. I skipped the egg glaze and added several other spices. Next time I'll go a little easy on the spices, but that's my own fault. Definitely making again, and looking forward to my leftovers tomorrow!

Sugar Cookie Frosting

I followed the recipe exactly and ended up with a bunch of sugar left over. With the addition of more milk, it took on a frosting consistency; however, the vanilla extract seemed pretty strong tasting. It was okay, but I'm not sure if I'll make this again.

Shortbread Squares

These tasted very buttery and slightly sweet, but were very chalky in texture. I even reduced the flour by a cup after reading the reviews and they still turned out like chalk in my mouth. Very hard to swallow. I may make these again, if I modify the recipe.
