About this Cook
I work part-time in a scrapbooking store at the Mall of America, and I live in an apartment with my wonderful husband Jesse, our roommates Andy and Jake, and our cat George. I grew up in a family who believed eggs and potatoes were made in the microwave, lasagna had broccoli in it, and the only cheese in the house was Velveeta. With Jesse's help, I'm hoping to plow my way through learning to cook with real food!
My favorite things to cook
Surprisingly, I'm pretty good at banana bread and pancakes. I enjoy trying new recipes, but I get a little discouraged if they don't turn out right!
My favorite family cooking traditions
My maternal grandmother has an amazing sausage stuffing recipe, which I look forward to every Thanksgiving. Now I also enjoy my mother- and sister-in-law's delicious cooking.
My cooking triumphs
The other day I made mashed potatoes from scratch, and they turned out almost as good as my husband's!
My cooking tragedies
One time I was making oatmeal for my husband and myself. It was nearly done when I opened up the cinnamon shaker and tipped it over the pot. Unfortunately, the shaker part had come off and I ended up dumping a huge glob into the oatmeal! It was completely inedible. Another time I tried to make "Skittle cookies" - just like M&M cookies, right? The Skittles exploded in the oven and fused the cookies to the pan. We had to throw both pans out. The cookies were rock hard and tasted like sour fruit. Yuck!

Balsamic Bruschetta
I made these as finger snacks on a night when a group of us were getting together for Friskies (gin and Fresca) at our apartment. I used a can of diced tomatoes, about a tablespoon or so of dried basil (my supermarket didn't have any fresh basil this time of year), a spoonful of minced garlic from the jar, and regular salt. I sliced the bread pretty thick (like Texas toast sized slices), coated each with olive oil cooking spray, and toasted them at 350 in the oven for about 7 minutes. I then spooned the mixture onto them, since my friends wanted it "warmed up." It was a hit! They devoured about 4 to 5 slices each and asked for more, so I whipped up another batch, but this time instead of putting the cheese in the mixture itself, I left it out and sprinkled it in a mound on top. It was pretty good, but I think fresh tomatoes and fresh basil will make it so much better. Thanks for making me the "best wife ever!" :)

White Chocolate Macadamia Cranberry Dreams
Fantastic! I didn't change a thing. I did half the recipe since I only had 1-1/2 cups of flour, and then I heated up plain white chocolate chips in the microwave and drizzle them over the cookies after they came out of the oven. I brought them to work for Valentine's Day and I got rave reviews; one coworker also asked for the recipe!

Irish Cream Sugar Cookies
I followed the suggestion of other reviewers and used more irish cream. These turned out great! I brought them to a cookie exchange and had a coworker ask for the recipe! My roommate and husband raved about them for days.
